This is supposed to be a side dish for roasted meat, but we very often eat this for dinner with a salad and some steamed broccoli - my son LOVES it! You can add whatever you like to it, I've added some chicken breasts and baked them on top of the rice, skinless of course!

1 green pepper, diced

1 medium onion, diced

Non-stick cooking spray

1 can (4.25 ounces) sliced mushrooms with liquid

1 can (8.75 ounces) beef broth

1/2 cup rice (NOT Minute Rice, but Uncle Ben's converted works very well)

 

In a casserole dish that can go on top of the stove and in the oven, saute green pepper and onion in non-stick cooking spray. Add mushrooms, beef broth, and rice. Bake, uncovered, for 1 hour at 350º.
