Helen's Northern Bean Soup

12 cups water

16 ounces white beans -- northern, dry

12 ounces potatoes

1 tablespoon olive oil

vegetable cooking spray

2 cups chopped carrots

2 cups chopped mushrooms

2 cups chopped red bell pepper

2 cups chopped scallions

2 cups chopped onions

2 cups canned tomatoes -- with basil crushed

 

Soak beans overnight. Throw them into water and cook until almost ready. Add cubed potatoes; while that is cooking, in a skillet saute remaining ingridients until half-ready (spray the skillet with oil - I use those sprayers, so it's 0 points), Combine the veggies in the soup cook another 10 min. Serve.

Makes approx 24 (1 cup) servings.
