Hot Milk Cake

Quick and easy - this is one of those throw together last minute things that saves your bottom when guests show up un-announced! If you are daring, add 1/2 cup cocoa and have a chocolate Hot Milk Cake! Yum!
1 cup all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
4 egg whites
1 cup sugar
1 teaspoon shortening or butter
1/2 cup skim milk
1 teaspoon vanilla
Preheat oven to 350º. Lightly grease an 8- by 8-inch square pan. In a small bowl, combine flour, baking powder and salt. Set aside. In a large bowl, beat the eggs and sugar until slightly thickened and creamy, about one minute. Add flour mixture and continue to beat until combined. In a microwave-safe container, microwave shortening and milk together until milk is hot and the shortening has melted, about one minute. Add vanilla. Beat into the batter. Pour into prepared pan and bake 35 minutes, until golden brown on top and toothpick inserted in center comes out clean
