Marti's Super Supper

3/4 large head of cabbage

3 cups baby carrots

1 med purple onions

covered with water

1 teaspoon seasoned salt -- nature's

1 cup cauliflower flowerets

2 cups broccoli flowerets

1/2 cup fresh spinach

( left over from salad--wished I had more)

1 cup frozen green peas

10 3/4 ounces healthy request cream of celery soup -- 1 can

2 cups instant rice -- minute rice

 

Simmer cabbage, carrots, onion in the water with the season salt, about an hour, until the veggies were firmly done and half the water was gone. Add the rest of the ingredients and simmer about 15 mins, until the rice was done & it was thick & bubbly.

Makes 4 (approx 2 cup) servings

Marti's Notes: Y'all this stuff was really good! I had about 2 cups of it for dinner and then about a 1/2 cup later for snack =)- maybe I was just really hungry
