Oven Barbecued Chicken

Cooking spray

4 (6 ounce) skinned chicken breast halves

1/2 cup jellied cranberry sauce

1/4 cup tomato paste

2 Tablespoons yellow mustard

1 teaspoon cider vinegar

 

Preheat oven to 375º. Line a large shallow baking dish with foil. Coat the foil with cooking spray. Place chicken in prepared dish bone side down. Mix cranberry sauce, tomato paste, mustard and cider vinegar in a blender and blend until smooth. Brush half of mixture over both sides of chicken and reserve the rest of the sauce. Bake at 375º for 25 mintues. turn chicken and brush remaining sauce onto both sides of the breasts. Bake 20 more minutes or until done.
