Peasant Vegetable Bean Soup

1 Point per serving

 

4 C. (2 16 oz. Cans) Tomatoes, coarsley chopped and undrained.

2 C. Water

1/2 C. Chopped celery

1/2 C. Chopped Onion

2 C. Shredded cabbage

2 Tsp. Chili seasoning

1/8 Tsp. Black pepper

1 Tsp. Parsley

10 oz. Can Pinto beans (rinsed and drained)

10 oz. Can Red Pinto beans (rinsed and drained)

 

Blend undrained tomatoes in blender for 15 seconds or until smooth. Pour blended tomatoes in large saucepan. Add rest of ingredients and stir until blended. Simmer for 30 minutes
