Pork Chops in Beer

1 pound pork chops -- 4 - thick cut

salt and pepper -- to taste

1 tablespoon vegetable oil

1 onion -- thinly sliced

2/3 cup beer -- dark ale preferably

1 tablespoon cider vinegar

1 1/2 tablespoons coarse mustard

1/2 cup light sour cream

chopped green onions

 

Salt and pepper the chops on both sides. Heat the oil in a skillet until very hot. Sear the chops on both sides, about 2 minutes per side, until brown. Remove the chops and set aside. Saute the onions in the pan until soft. Place the chops on top of the onions, then pour the beer and vinegar over them. Cover and simmer until the chops are tender, about 20 minutes. Remove the chops from the pan, stir in the mustard and reduce the sauce. Adjust the seasonings as needed (you may need more vinegar). Remove from the heat. Stir in the sour cream. Serve the chops plated with the sauce and garnished with green onions.
