Santa Fe Turkey Skillet

4 Points Per Serving

 

2 (1/2 pound) turkey tenderloins, cut crosswise into 1/4 inch thick slices

1 1/2 TBS. chili powder

Cooking Spray

8 Green onions, cut into 1 inch pieces

1 large clove garlic

1 (15oz) can no-salt-added black beans, rinsed and drained

1 (10oz) package frozen whole-kernal corn, thawed

1/4 cup water

1 TBS. fresh lime juice

1/4 tsp. salt

8 cherry tomatoes, halved

 

Combine turkey and chili powder, tossing until turkey is coated. Coat a large nonstick skillet with cooking spray; place over med-high heat until hot. Add turkey, and saute 5 mins. or until done. Remove turkey from skillet; set aside. Coat skillet with cooking spray; place over med-high heat until hot. Add green onions and garlic to skillet; saute 2 mins. Add beans and next 4 ingreds; cook, stirring constantly, 3 mins. or until mixture is thoroughly heated. Add turkey and tomatoes to skillet; cook, stirring constantly, until mixture is thoroughly heated.

Yields: 4 servings
