Shrimp Chowder

cooking spray

1 1/2 cups frozen chopped onion, celery, and pepper seasoning blend

3 (15-ounce) cans reduced-fat baked potato-style soup (such as Healthy Choice)

2 (7-ounce) cans tiny shrimp, rinsed and drained

2 1/2 cups fat-free milk

1/4 teaspoon pepper

 

1. Coat a large saucepan with cooking spray; place over medium heat until hot. Add frozen seasoning blend, and cook for 5 minutes, stirring occasionally. 2. Add potato soup and remaining ingredients. Cook over medium-high heat 5 to 7 minutes or until thoroughly heated, stirring occasionally.

Yields 9 (1-cup) servings
