Soy-To-The-World Burgers

1/2 pound firm tofu -- drained

1/4 cup dry breadcrumbs

1/4 teaspoon salt

1/4 teaspoon pepper

1 large egg white -- lightly beaten

1 tablespoon olive oil

4 curly leaf lettuce leaves

4 (1 1/2 oz.) red-cal whole-wheat hamburger buns -- split

4 tomato slices

4 yellow onion slices

 

1. Cut tofu cake into 8 slices. Gently press tofu slices between paper towels until barely moist. Combine breadcrumbs, salt, and pepper in a shallow dish; stir well. Dip tofu slices in egg white, and dredge in breadcrumb mixture. 2. Heat olive oil in a large nonstick skillet over medium heat. Add tofu slices, and cook 3 minutes on each side or until browned. 3. Place lettuce leaves on bottom halves of buns; top with tofu slices, tomato, onion, and top halves of buns. Serve immediately.

Yield: 4 servings.
