Sweet and Sour Pork Medallions

Secret to Sweet and Sour Pork Medallions is Out of the Bag. Expecting company? How about preparing an unforgettable meal that not only tastes great, but is lean, low in calories and easy to prepare? Sweet and Sour Pork Medallions are moist, tender and delicious. A browning bag is the key to making this dish so moist, tender and flavorful. It also makes cleanup a snap.

2 pork tenderloins

Butter-flavored cooking spray

1/2 - 1 tsp Natures Season

1 oven browning bag

1 tsp all-purpose flour

1 8 ounce bottle fat-free sweet and sour dressing (Old Dutch brand)

2 - 3 tbsp Shake and Blend flour

1 -2 tbsp water

 

Preheat oven to 325º. Lightly spray tenderloins with cooking spray and sprinkle evenly with Natures Season. Place all-purpose flour in browning bag and shake to coat the bag. Place tenderloins in the bag and pour dressing into the bag. Seal the bag and cut 2 - 3 small slits in bag to allow it to vent. Place bag into a roasting pan and cook for 45 - 55 minutes until tenderloins are done. When cooked, remove tenderloins from browning bag and allow to cool for 5 - 7 minutes before slicing into medallions. While tenderloins cool, pour dressing from roasting pan into non-stick skillet. In a small bowl, combine Shake and Blend flour with water until flour dissolves. Pour flour mixture into the dressing and heat over medium high heat until dressing begins to thicken. Once thickened, drizzle over medallions.

Makes 4 servings.

Cook's note to reduce sodium:Substitute 1/4 - 1/2 tsp of black pepper for Natures Season. Use 4 ounces sweet and sour dressing, 1/4 cup water and 1/3 cup low-sodium chicken broth. ...so enjoy!
