Taco Soup (Vegetarian)

I made this for lunch today, it is very tasty. It's a high fiber, low fat soup. My husband even liked it. I got the recipe from the Healthy Choice web site. I changed the ground beef to Harvest Burger Crumbles.

2 cups harvest Burger Crumbles

1/2 pkg taco seasoning mix

2 cups water

1 large onion -- chopped

1 3/4 cups hominy, canned -- 1 can

1 3/4 cups corn, canned -- 1 can

1 3/4 cups baked beans, vegetarian -- 1 - 16 oz can

1 3/4 cups pinto beans, cooked -- 1 can

1 3/4 cups stewed tomatoes -- 1 can

1 3/4 cups tomatoes with green chilis -- or 1 can rotel

1 package ranch salad dressing mix, dry

 

Drain hominy, corn and pinto beans. Saute onions in a 4 quart or larger dutch oven with nonfat cooking spray for a few minutes and add all the remaining ingredients. Simmer for 15 to 30 minutes.

This is a vegetarian recipe. You could use ground turkey or very lean ground beef. The Harvest Burger Crumbles add up to 4 of the overall points. To use turkey or beef, you would need to figure out the points for the meat and add the difference divided by 12 to each serving. Example, 16 ounces of lean ground beef would cook up to about 12 ounces, I think. 12 ounces of lean ground beef cooked, is 20 points minus the 4 for the crumbles would leave 16 added points. 16 divided by 12 servings equal 1.3 added points per serving. The same amount of lean ground turkey would add 1 point per serving.
