Thyme for Fish

1 1/2 pounds flounder fillets
2 2/3 tablespoons reduced-calorie mayonnaise
1/2 teaspoon dried thyme
1/8 teaspoon grated lemon peel
salt and pepper -- to taste
2 tablespoons dry bread crumbs -- or wheatgerm
Preheat oven to 350º. Place fish in a shallow baking pan that has been sprayed with a nonstick cooking spray. Combine mayonnaise, thyme, lemon peel, and salt and pepper. Spread mixture evenly over fillets. Sprinkle with bread crumbs. Bake, uncovered, 30 minutes.
