Tofu Onion Quiche

From The New Farm Vegetarian Cookbook

4 Points Per Serving

 

Fry until the onion is limp:

1 large onion, sliced

2 Tbsp margarine

2 cups mushrooms, sliced

Cook a few minutes.

Combine in a processor blender until creamy:

2 cups tofu

2 Tbsp. oil

1/2 tsp. garlic powder

2Tbsp. lemon juice

1 tsp. salt or 1 Tbsp soy sauce

2 Tbsp. nutritional yeast flakes (optional, gives a cheesy flavor)

2 Tbsp. flour

 

Combine flour mixture. mushrooms and onions. Put in the bottom of an 9" unbaked pie shell. Bake for 45 to 50 minutes until filling is set in the middle.

No servings suggested, I'm guessing serves 4
