Tuna Potato Dish with Corn Topping

1 2/3 cup water

1 1/3 cup instant potato flakes

1/3 cup nonfat dry milk powder

1/4 cup nonfat mayonnaise

1/4 teaspoon black pepper

1 teaspoon dried onion flakes

1 teaspoon parsley flakes

1 teaspoon chili seasoning

1 can (6 oz) can white tuna in water -- drained & flaked

1 cup (8 oz) can cream-style corn

3/4 cup shredded Kraft reduced-fat Cheddar cheese

"Here's a recipe full of taste surprises that is sure to win smiles all around! The bottom part is a kind of tuna-flavored shepard's pie (with all those cozy mashed potatoes); the topping of cheese and corn is almost to good to be true--and healthy!"

 

1. Spray an 8-by-8-inch glass microwaveable baking dish with butter-flavored cooking spray. In an 8-cup glass measuring bowl, microwave water on HIGH (100% power) for 2 minutes or until water starts to boil. Add potato flakes and dry milk powder. Mix well to combine. Let set for 2 to 3 minutes. Stir in mayonnaise, black pepper, onion flakes, parsley flakes, and chili seasoning mix. Add tuna. Mix well to combine. Spread mixture into prepared baking dish. In a small bowl, combine corn and Cheddar cheese. Evenly spread corn mixture over top of tuna mixture. Microwave on HIGH for 8 minutes, turning dish after 4 minutes. Place baking dish on a wire rack and let set for 3 minutes.

Divide into 4 servings. Freezes well.
