White Bean Chili

1 tbsp oil

1 lb chicken, in 1" pieces

1 medium onion chopped

2 cloves garlic, minced

1 can (15 oz) diced tomatoes with jalapenos

3 cans (15 oz each) white beans, undrained

3 tbsp Lawry's mesquite marinade (bottled)

1/4 cup chopped parsley or cilantro

 

Saute garlic and onion in oil in dutch oven, until soft. Add chicken and cook until no longer pink. Reduce heat to low and add tomatoes, beans, sauce, parsley. Bring to simmer and cook 5 more min or until heated through.

Makes 6 servings

**I like to cook the chicken on the George Foreman grill and just chop it up for the recipe. I saute the onion and garlic in a non stick (spray with a bit of Pam), so I omit the oil.
