Mississippi Mud Cake

Ingredients:

1 (18 1/4 or 18 1/2 ounce) package chocolate cake mix
1 cup water
3 eggs
1/2 cup vegetable oil
1 (14 ounce) can Eagle Brand Sweetened Condensed Milk
1 teaspoon ground cinnamon
3 cups miniature marshmallows
1/4 cup margarine or butter
1/4 cup cocoa
1 cup confectioners' sugar
1 cup chopped pecans
1 teaspoon vanilla extract

Preparation:

Preheat oven to 350 degrees F
In large mixer bowl, combine cake mix, water, eggs, oil and 1/3 cup sweetened condensed milk and cinnamon
Beat on low speed until moistened, then beat on high speed 2 minutes.
Pour into well pick inserted near center comes out clean
Top with marshmallows; bake 2 minutes longer or until marshmallows begin to puff
In saucepan, over medium heat, melt margarine
Stir in remaining sweetened condensed milk and cocoa until smooth.
Remove from heat
Stir in remaining ingredients
Spoon evenly over warm cake

CHOCOLATE ZUCHINNI CAKE

Ingredients:

1 1/2 PKG BROWN SUGAR
1/2 CUP SUGAR
1/2 CUP BUTTERMbr> 1/2 CUP OIL
1/2 TEASP ALLSPICE
1/2 EASP CINNAMON
1/2 TEASP SALT
3 LARGE EGGS,br> 1 TEASP VANILLA,br> 1/2 CUP BUTTERMILK
2 1/2 CUPS FLOUR
5 TBLES COCOA
4 CUPS ZUCHINNI,br> 1 CUPS CHOCOLATE CHIPS

Preparation:

CREAM SUGARS, BUTTER, OIL, EGGS, VANILLA AND MILK
MIX FLOUR, SPICES, SALT
STIR IN ZUCHINNI AND CHOCOLATE CHIPS
Bake 325 for 40-45 minutes in a 11x17 jelly roll pan

UPSIDE DOWN CAKE

Ingredients:

2 eggs
2/3 cup sugar
6 Tbsp juice from fruit
1 tsp flavoring
1 cup sifted flour
1/3 tsp baking powder
1/4 tsp salt
1/3 cup butter
1/2 cup brown sugar

Preparation:

Beat 2 eggs untill thick and lemon colored
Gradually beat in 2/3 cup sugar

Beat in all at once
6 Tblespoons juice from fruit
1 tsp.flavoring

Sift together and beat in all at once
1 cup sifted flour
1/3 tsp baking powder
1/4 tsp, salt
Melt in heavy baking dish or skillet..1/3 cup butter and 1/2 cup brown sugar
Arrange fruit in baking pan on the butter sugar coating
Pour batter over fruit
Bake at 350 for 45 minutes or until toothpick comes out clean
Immediately turn upside down on serving plate
Do not remove pan for a few minutes
Brown sugar mixture will run down over cake instead of clinging to pan

COOKIE SHEET CAKE

Ingredients:

2 CUPS SUGAR
2 CUPS FLOUR
1 CUP WATER
1/2 CUP SHORTENING
1/4 CUP BUTTER
4 HEAPING TBLES COCOA
2 EGGS
1 TEASP VANILLA
1 TEASP SODA
1/2 CUP MILK SOURED WITH 1 TBLES VINEGAR

Icing Ingredients:

6 Tbsp milk
1/4 cup butter
Vanilla
1 lb powdered sugar
2 Tbsp cocoa

Preparation:

MIX 2 CUPS SUGAR AND 2 CUPS FLOUR; SET ASIDE
BRING TO A BOIL 1 CUP WATER, 1/2 CUP SHORTENING, 1/4 CUP BUTTER AND 4 HEAPING TBLES COCOA
POUR THIS OVER THE FLOUR AND SUGAR
MIX WELL
ADD 2 EGGS AND 1 TEASP VANILLA
STIR 1 TEASP SODA INTO 1/2 CUP MILK SOURED WITH 1 TBLES VINEGAR...
ADD TO MIXTURE..

Ingredients:

10 TBLES COCOA
1/2 CUP WESSON OIL
1 CUP BOILING WATER
2 EGGS
2 CUPS FLOUR
1 1/2 TSP SODA
SALT
1/2 CUP SOUR MILK

Preparation:

MIX sugar, cocoa,oil, water,and eggs well
ADD 2 CUPS FLOUR, 1 1/2 TEASP SODA, SALT &1/2 CUP SOUR MILK
BAKE 400 FOR 20 MINUTES FOR LOAF PAN
Then 350 FOR 45-60 MINUTES IN TUBE

Choco-Dot Pumpkin Cake

Ingredients:

2 cups sifted flour
2 cups pumpkin
2 teasp.baking powder
1 cup veg oil
1 teasp baking soda
1 1/2 cups bran flakes
1/2 teasp salt
1 1/2 teasp cinnamon
1 cup chocolate chips
1/2 teasp ground cloves
1/4 teasp allspice
1 cup chopped nuts
1/4 teasp ginger
2 cups sugar
4 eggs

Preparation:

Mix dry ingredients together..set aside
In a large mixing bowl beat eggs until foamy
Add pumpkin, vegetable oil, and bran flakes... mix well
Add dry ingredients...mixing only until combined
Stir in chocolate chips and nuts
Spread evenly in ungreased tube pan
Bake at 350 for 1 hour and 10 minutes or until wooden pick inserted comes clean
Cool completely before removing from pan
Place on cake plate... drizzle with powdered sugar glaze

OATMEAL CAKE

Ingredients:

1/4 pound butter
1 cup brown sugar
1 cup white sugar
1 cup Quick oatmeal
2 eggs
1 teasp vanilla
1 1/3 cups flour
1 teasp soda
1/2 teasp salt
1 teasp cinnamon

Preparation:

Pour 1 1/4 cups boiling water over oats and let stand 20 minutes
Cream butter and sugars
Mix with soaked oats..add unbeaten eggs one at a time beating well
Add vanilla
Sift dry ingredients together and add to mixture
Pour into pan
Bake 350 for 30 minutes

Spread with:
1 cup brown sugar
1 cup coconut
1 cup Milnot
4 Tblesp melted butter
Put under broiler until the coconut is toasted

RED DEVILS FOOD CAKE

Ingredients:

1/2 cup crisco
1 1/2 cups sugar
2 eggs
1 cup buttermilk
1 teasp vanilla
2 oz red food coloring
2 Tblesp cocoa
1 teasp salt
2 cups flour

Preparation:

Sift cocoa,salt and flour
Mix 1 Tblesp vinegar and 1 teasp soda and let set
Cream shortening and sugars ..Add eggs,coloring and vanilla
Add dry ingredients alternately with milk
Stir in soda and vinegar
DON'T BEAT
Bake 350 for 30 minutes

ICING:
1 cup milk
1/2 cup flour
Cook and cool..add dash of salt
Mix 1 cup crisco and 1 cup sugar
Beat at high speeed until fluffy
Add first mixture and 1 teasp vanilla
Beat at high speed

MOM'S SAUSAGE CAKE

Ingredients:

1 pound Tennessee Pride ground sausage(mild)
1 1/2 cups brown sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
3 cups all purpose flour
1 cup hot coffee
1 cup chopped nuts
1 1/2 cups white sugar
1 teaspoon clove
1 teaspoon allspice
2 teaspoons soda
1 cup buttermilk
1 cup raisins

Preparation:

Measure buttermilk into a 1 cup size measurement and then pour into a larger container and add soda
(The mixture will foam up and run over, so you need a larger container to retain the mixture)
Set aside
In a separate container, pinch off small pieces of the sausage, uncooked, until the whole pound is in pieces
Set aside
In large mixing bowl combine sugar, flour, spices
Add coffee, buttermilk with the soda mixture, and the raw sausage
Beat on high speed until all ingredients are well mixed
Stir in nuts and raisins
Pour into ungreased 9-by-13-inch pan
Bake one hour in a 350 degree oven

Frosting Ingredients:

4 ounces cream cheese
2 1/2 cups confectioners sugar
2 teaspoons buttermilk
4 tablespoons (1/2 stick) unsalted butter
2 teaspoons vanilla extract

Frosting Preparation:
Combine frosting ingredients into a large mixing bowl, and beat on high speed with electric mixer until light and fluffy
Chill frosting for 30 to 45 minutes
You can scrape the bowl of frosting with a rubber spatula into a gallon-size locking plastic bag before refrigerating, and then snips a corner of the bag to squeeze the frosting onto the cake -

Strawberry Punch Bowl Cake

Ingredients & Preparations:

2 angel food cakes broken into bite size pieces
1 large box instant vanilla pudding..make using 3 cups milk
1 pkg. frozen strawberries (or fresh ones)
1 package glaze + 3/4 cup sugar
Cool whip on top

Velvet Crumb Cake

Ingredients:

1 1/2 c. Bisquick
1/2 c. sugar
1 egg
1/2 c. milk
2 T. shortening
1 tsp. vanilla
Broiled topping

Preparation:

Heat oven to 350*
Grease and flour 8" square or 9" round pan
Beat all ingredients except topping in large bowl on low speed 30 seconds, scraping bowl constantly
Beat on medium speed 4 min, scaping bowl occasionally
Pour into pan
Bake 30 to 35 min. or until toothpick inserted in center comes out clean
Cool slightly
Spread toping over cake. Set oven control to broil
Broil about 3" from heat about 3 min or until golden brown

Broiled topping:

Mix 1/2 c. flaked coconut
1/3 c. packed brown sugar
1/4 c. chopped nuts
3 T. margarine, softened
2 T. milk.

RICE PUDDING

Ingredients:

4 cups milk
1/2 cup uncooked rice
1 cup Cool Whip
1/2 cup sugar
Salt
1 tsp. vanilla
2 egg yolks beaten

Preparation:

Combine milk, rice, sugar, and salt in heavy pan
Gently simmer uncovered stirring frequently for 50 mins
Remove from heat and stir in vanilla
Whisk in egg yolks very vigorously
Let cool to room temp
Fold in CoolWhip into pudding

Grandma Pike's Bakeless Fruit Cake

Ingredients:

1/2 pound graham crackers rolled fine
1/2 pound marshmallows cut fine
1/2 pound dates cut fine
1/2 cups walnuts cut fine
1/2 cup cream
marschino cherries

Preparations:

Mix together and let stand overnight

Great "No Bake" Coconut Cake

Ingredients & Preparations:

Buy an angel food or pound cake
Cut lengthwise so that there are 3 or 4 layers
Set aside

Filling and Frosting:
2 cups sugar
16 oz. container sour cream
14 oz. bag coconut
8 oz. container whipped topping

To make filling:
Mix sugar and sour cream. Save 1 cup of mixture for frosting
Also, reserve 1 cup coconut to sprinkle on the top and sides of the cake
Add remaining coconut to sugar and sour cream mixture
Spread between layers

To make frosting:
Add container of whipped topping to the cup of reserved filling
Frost sides and top of cake
Sprinkle with remaining coconut
Keep cake refrigerated

JELLO POKE CAKE

Ingredients:

1 cake mix, white or yellow baked and cooled
1 cup boiling water
4 serving size jello
1/2 cup cold water

Preparations:

Prick holes in cake with two-pronged fork at 1/2 inch intervals
Dissolve jello in boiling water
Add cold water and spoon over cake
Chill 4 hours

OZARK PUDDING

Ingredients:

Beat together 1 egg and 3/4 cup sugar
1/2 cup unsifted flour
1/2 cups chopped apples
1 1/2 teasp baking powder
1/8 teasp salt
1/2 cups nuts
1 teasp vanilla

Preparations:

Spread in 8" pan
Bake 350 for 30-35 minutes

CREAM PUFFS

Ingredients & Preparations:

Heat 1 cup water and 1/2 cup butter
Stir in all at once:
1 cup sifted flour
stir hard over heat until it forms a ball

Remove from heat Beat in 4 eggs one at a time
Beat until smooth and velvety. Drop by spoonful onto ungreased sheet
Bake until dry at 400 for 45-50 min
Cool Slowly

Preparations:

2-15 oz. cans pineapple tidbits, drained
1 cup sugar
1/2 cup all-purpose flour
TOPPING:1 roll Ritz-type crackers, crushed
1 stick butter, melted and cooled
1/4 cup brown sugar

Preparations:

Mix pineapple, sugar, and flour and place in a greased casserole dish
Mix topping and spoon over pineapple
Bake at 350 degree for 45 minutes
Delicious hot or cold

Marshmallow Creme Dip For Fruit

Ingredients:

1 cup powdered sugar
8 oz. cream cheese
7 oz. marshmallow cream
Dash of orange peel for garnish

Preparations:

Mix first 3 ingredients together well and garnish with orange peel
Serve with strawberries, apples, pineapple, grapes, pears or whatever you like

Mix together:
1 cup sugar
1 cup flour
1 cup raisins
2 teasp Baking Powder
1/2 cup water

SAUCE:
2 1/2 cups water
2 cups brown sugar
Mix and pour over mixture

Coconut Fudge Pie

Ingredients & Preparations:

Spread 1 1/2 tblsp butter in pan
Press in 1 1/3 cups coconut

Combine in blender:
1 can carnation milk
2/3 cup brown sugar
1 egg
3 tblsp flour
Vanilla 4 squares Bakers semi sweet chocolate cut into 1/4's

Pour into coconut lined pan
Sprinkle with 2/3 cup coconut

Ingredients:

1 1/2 cup pulp
1 quart milk
4 eggs
Butter
2 cups sugar
3 cups flour
1 teasp baking powder
1/4 teasp soda
1/4 teasp cinnamon

Preparations:

Bake 350 for 1 1/2hour

Pineapple Upside-Down Cake

Ingredients:

1/4 cup softened butter or margarine, plus 2 tablespoons(divided use)
1/3 cup packed brown sugar
1 tablespoon water
1 (8-oz)can pineapple slices, drained and halved
4 maraschino cherries, halved
1 1/3 cups all-purpose flour
2/3 cup granulated sugar
2 teaspoons baking powder
2/3 cup milk
1 egg
1 teaspoon vanilla

Preparations:

Preheat oven to 350 F
Melt the 2 tablespoons butter or margarine in a 9x1 1/2-inch round baking pan
Stir in brown sugar and water
Arrange pineapple and cherries in the pan. Set pan aside

In a medium mixing bowl stir together flour, granulated sugar and baking powder
Add milk, the 1/4 cup butter or margarine, egg and vanilla
Beat with an electric mixer on low speed till combined
Beat on medium speed for 1 minute
Carefully spoon the cake batter over the fruit in the baking pan so the fruit arrangement isn't disturbed

Bake for 30 to 35 minutes or till a wooden toothpick comes out clean
Cool on a wire rack for 5 minutesLoosen sides; invert onto a plate
Serve warm
Makes 8 servings

Mincemeat Fruit Cake

Ingredients:

2 cups sifted all-purpose flour
1 teaspoon baking soda
2 eggs, slightly beaten
1 1/3cups sweetened condensed milk
2 cups(a 28oz jar)ready-to-use mincemeat
2 cups(a 1-pound jar)mixed candied fruit
1 cup coarsely chopped walnuts
Glacéed cherries and walnut halves

Preparations:

Preheat oven to 300 degrees
Butter a 9-inch tube or springform pan
Line pan with wax paper; butter again
Sift flour and soda. Set aside
In large bowl, combine eggs, milk, mincemeat, fruit and walnuts. Mix well
Fold in flour mixture
Turn into prepared pan
Bake 2 hours or until center springs back when lightly touched with finger and top is golden brown
Cool in pan 5 minutes
Turn out of pan,remove paper. Cool
Decorate with glacéed cherries and walnut halves

Ingredients:

2 cups flour
1 1/2 tsp baking soda
1 1/2 tsp baking powder
4 Tblsps cocoa
1 cup sugar
1 cup mayonnaise or Miracle Whip
1 tsp vanilla
1 cup water

Preparations:

Combine dry ingredients
Add all other ingredients, mix well and pour into loaf pan
Bake 25 minutes at 350°F

CARROT CAKE

Ingredients:

2 CUPS FLOUR
1/2 CUP COOKING OIL
2 CUPS SUGAR
4 EGGS
1 TEASP SALT
3 CUPS GRATED CARROTS
1 TEASP SODA
2 TEASP CINNAMON
1 CUP CHOPPED PECANS

Preparations:

BEAT SUGAR , OIL, EGGS, AND BEAT UNTIL WELL MIXED
BLEND IN FLOUR, SALT, SODA, CINNAMON
SLOWLY MIX IN CARROTS AND PECANS

2 TEASP VANILLA
1 LB POWDERED SUGAR

Applesauce Cake

Ingredients:

1/2 cup shortening
1 cup sugar
1 egg
2 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp cloves
1 tsp cinnamon
1 cup strained thick applesauce
2/3 cup chopped raisins
2/3 cup chopped walnut meats

Preparations:

Cream together shortening and sugar
Add egg; beat well
Sift together flour, soda, cloves and cinnamon
Add alternately with applesauce to creamed mixture
Add raisins and nut meats. Pour into 9 "greased tube pan
Bake in moderate oven (350F)for one hour
Let stand until cold
Remove cake from pan

Chocolate Dream Cake

Ingredients:

3/4 cup unsweetened cocoa powder
1/4 cup sugar
1/2 cup boiling Water
1 pkg(16oz)Angel food cake mix
1 1/4 cup water
1 1/2 cup skim milk
1 pkg(1 1/3 oz)whipped topping mix
1 pkg(1.4 oz)sugar-free instant chocolate pudding mix

Preparations:

Preheat oven to 350
Line a jelly roll pan with waxed paper
Whick together cocoa,sugar and boiling water
Cool to lukewarm

Prepare cake mix per package directions using 1 1/4 cup water and adding cocoa mixture
Spread batter evenly in the pan
Bake 20 minutes or until top looks dry
Invert onto large wire rack..Remove the pan and waxed paper
In a medium bowl add topping and pudding mixes
Beat on low speed until moistened
Beat at high speed until peaks form..Chill 5 minutes
Cut cake crosswise into thirds
Cover each with topping..stack chill 2 hours
