In our family, food is one of our favorite subjects. We enjoy a variety of foods ranging from American to Italian to Mexican to Cajun, etc. I hope you can find some of our family favorites to try and hopefully you too can enjoy them as we do. I do alot of cooking for large numbers and have included some of these also.
1 bag of Doritos, crushed
1 can Chili Hot Beans, washed & drained
1 2 cup bag of shredded cheddar cheese
1 large bottle Catalina dressing
3 large tomatoes, chopped
1/2 head lettuce, torn into pieces
1# ground beef, browned and drained
Prepare meat and set aside to drain. Mix all other ingredients except for dressing. Mix meat into salad ingredients. Toss well and add the bottle of dressing, mixing well. This will serve about 6-8 people.

1 can whole kernel corn
1 can tomato soup
1 can chili hot beans
Brown ground beef in heavy skillet, drain. Return to heavy iron skillet. Combine all other ingredients, mixing well. Prepare your favorite cornbread recipe and pour over mixture. Bake in 425 degree oven until cornbread is done. Serves 6-7 people.
1# peeled crawfish tails and fat
1 stick oleo
1 large onion, chopped
1 green pepper, chopped
1 clove garlic, minced
1 T. paprika
2 cups water
salt, black pepper and red pepper to taste
Melt oleo in deep, thick frying pan(do not use black iron pot or skillet). Season crawfish tails with seasonings; add to oleo. Cook 2 to 3 minutes. Remove crawfish and set aside. Add chopped onions, pepper and garlic to pot. Saute well for at least 10 minutes. Return crawfish to pot and add water. Stir and cook slowly for about 30 minutes, adding more water if needed. Serve on rice. Can substitute shrimp instead of crawfish.
1/4 cup oleo
1/2 cup chopped onion
1/4 cup chopped green pepper
2 tomatoes, choppedp> 1 quart of fresh or frozen corn
salt and pepper to taste
Saute onions and peppers in oleo. Add all other ingredients and simmer until vegetables are done.
1 1/2 cups sugar
1 t. vanilla
1/2 stick melted butter
pinch of salt
2 T. cocoa
1 small can evaporated milk (5 1/3 oz.)
1 unbaked pie shell
Mix all ingredients well with mixer. Pour into pie shell. Bake 50 to 60 minutes at 325 degrees.
1 4 oz. box chocolate pudding and pie filling (not instant)
2 cups milk
1 box devil food cake mix
1 small bag of chocolate chips
1 cup chopped nuts
Heat oven to 350 degrees. Gease 9 x 13 cake pan. In large saucepan, cook pudding according to directions on box. When puddling is thickened, stir in the box of cake mix by hand until mixed thoroughly 1 to 2 minutes. Pour into prepared cake pan. Sprinkle top of batter with chocolate chips and nuts. Bake 30 to 35 minutes.
