Auntie's Fresh Apple Cake

Amount Measure Ingredient -- Preparation Method

4 cups chopped tart apples
2 eggs
1 1/4 cups veggetable oil
2 cups sugar
3 cups all-purpose flour
2 teaspoons soda
1 teaspoon salt
2 tablespoons cinnamon
2 tablespoons vanilla

Mix all ingredients lightly by hand. Do not use mixer. Pour into a lightly greased 9x13 inch baking pan. Bake at 350 degrees for 30 minutes or until cake tests done. Poke holes in cake with fork. Pour glaze over cake while still hot.

Glaze
1/2 cup brown sugar
1/2 cup white sugar
3 T. Flour
1/2 cup water
1/2 stick butter

Mix flour and sugar together; add water and butter. Cook over medium heat until thickened, stirring constantly. Pour over hot cake.

Chocolate Thunder Cake

1 pkg. German chocolate cake mix
14 oz. sweetened condensed milk
1 jar fudge ice cream topping
16 oz. Cool Whip
2 Heath or Skor candy bars

Bake cake in a 9X13 pan as directed on box. Let cool 25-30 minutes. Poke holes in cake with wooden spoon handle. Pour on sweetened condensed milk, spread evenly. Wait 5 minutes. Spread fudge topping over cake. Wait 5 minutes. Spread Cool Whip over cake and sprinkle crushed candy bars over the top. Keep in refrigerator.

Coconut Cake

1 package white cake mix -- baked as directed in 9X13 pan
1 can sweetened condensed milk -- (14 oz.)
1 can cream of coconut -- (15 oz.)
1 Cool Whip -- (8 oz.)
1 can flake coconut -- (7 oz.)

Punch holes in hot cake with fork. Mix Condensed milk and cream of coconut; pour over hot cake. Cover; cool completely. Spread Cool Whip over cake, sprinkle with coconut. Store in refrigerator. Let set 24-48 hours before serving.

Easy Cherry Cheese Cake

8 ounces cream cheese -- softened
1 can sweetened condensed milk
1/3 cup lemon juice
1 teaspoon vanilla extract
1 can cherry pie filling
1 graham cracker pie crust -- 9 inch

Mix cream cheese and milk, add lemon juice and beat until well blended. Whisk in vanilla extract, pour into pie crust. Refrigerate 2 hours before topping with cherry pie filling.

Mom’s Sour Cream Cake

3 cups flour
3 cups sugar
1/4 teaspoon soda
1 cup sour cream
1 cup butter
6 eggs -- separated

Sift flour and measure; add soda and sift twice more. Cream the butter and sugar thoroughly. Add egg yolks, one at time, beating well after each addition. Add cream, then flour and soda mixture. Beat egg whites until stiff and fold in. Bake at 300 degrees for 1 1/2 hours in a greased and floured 9 x13 pan.

Please note no flavoring is added, this is not an omission, none is needed.

Punch Bowl Cake

2 cups crushed pineapple -- drained
1 small sugar free instant vanilla pudding
2 cups strawberries
3 large bananas -- sliced
12 ounces Cool Whip Lite
1 small Angel food cake -- cut up

Layer in a glass bowl, 1/2 cake, 1/2 bananas, 1/2 strawberries, 1/2 pineapple, 1/2 pudding mix, and 1/2 Cool Whip. Repeat layers. Refrigerate several hours before serving.

Quick'n'Easy Jello Cake

1 package white cake mix -- prepared as directed
1 large package cherry Jello
1 large carton Cool Whip
1 can cherry pie filling
2 cups water -- heated to boiling

Bake cake in 9x13 pan. Dissolve jello in water. Poke holes in cake with toothpick. Pour hot jello over. Refrigerate until completely cool. Spread with Cool Whip, top with pie filling.
