Blonde Brownies

1/2 cup shortening
2 cups brown sugar -- packed
2 eggs
1 teaspoon vanilla
1 1/2 cups sifted flour
2 teaspoons baking powder
1 teaspoon salt
3/4 cup chopped nuts
1 package chocolate chips -- (6 oz.)
Melt shortening in saucepan over low heat. Remove from heat, add sugar, eggs and vanilla. Add sifted dry ingrenients and nuts. Spread in greased 10x15" pan. Sprinkle chocolate chips over mixture. Bake at 350 degrees for 30 minutes.

2 cups sugar
1 cup melted butter
4 eggs
1/4 cup cocoa
1 1/2 cups self-rising flour
2 teaspoons vanilla
peanut butter chips -- optional
Mix all ingredients except eggs. Add eggs, one at a time, mixing well after each addition. Pour into a greased 9x12 pan and bake at 350 degrees for 30 minutes. Can sprinkle peanut butter chips on top before baking.

Jackie's Fruitcake Cookies

1/2 cup shortening (or margarine)
1 c. firmly packed brown sugar
1 large egg
1/4 cup buttermilk
2 c. all purpose flour
1/2 t. baking soda
1/2 t. baking powder
1 c. chopped dates
1 c. chopped pecans
1 c. choppped candied cherries
Comb. 1st 3 ingred. in a large bowl; stir in buttermilk, Comb.flour and next 3 ingred. & stir into brown sugar mixture. Stir in dates, pecans, & cherries, cover & chill 1 hr.
Drop by rounded teaspoonsful, 2 in. apart, onto lightly greased baking sheets (if desired, press whole pecan half on top)
Bake at 350* 10 minutes or until lightly browned. Transfer to wire racks to cool. Yield 5 dz.
(I usually do cherries, pecans and raisins)

Pepper's Fruitcake Cookies

1/4 Cup shortening
1/2 Cup firmly packed brown sugar
2 Eggs
1 1/2 Tbl. Milk
1/3 Cup jelly (any kind)
4 Cups chopped pecans
1/4 Lb. Candied cherries -- chopped*
1/4 Lb. Candied orange peel -- chopped*
1/4 lb. Candied pineapple -- chopped*
1 Box golden seedless raisins
1 1/2 Cups all purpose flour
2 Tea. Baking Soda
Cream shortening and sugar. Add eggs, milk, and jelly; mix well. Dredge pecans and fruits with flour mixed with soda. Add creamed mixture to fruit mixture and stir well. Drop by teaspoonful onto greased cookie sheets. Bake at 300 degrees F. for 25 minutes.
Yield: about 6 doz.
*(*I use 1 large container of the mixed candied fruit)

Peanut Butter Cookies

1 cup brown sugar
1 cup white sugar
1 cup peanut butter
2 sticks oleo
2 eggs
3 cups flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon vanilla
Cream oleo, sugars, and eggs. Add peanut butter, stirring well. Mix flour, baking powder, and baking soda. Add to creamed mixture. Stir in vanilla. Chill dough for at least two hours. Roll into balls, press with fork. Bake at 350 degrees 10-12 minutes. Do not overbake.

Raisin Spice Cookies

1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup shortening
1/2 cup brown sugar
1/4 cup granulated sugar
2 eggs
2 tablespoons milk
1 cup raisins
2 cups oats -- rolled (raw)
Sift flour, soda, salt, and spice into bowl. Cream shortening, sugars, eggs and milk. Add flour mixture; beat until smooth. Fold in raisins and oats. Drop from teaspoon onto greased cookie sheet. Bake 12-15 minutes at 375 degrees.

Snickerdoodles

1 cup margarine
2 eggs
2 2/3 cups self-rising flour
1 1/2 cups sugar
2 teaspoons cinnamon mixed with 2 tablespoons sugar
Cream margarine, sugar, and eggs. Sift flour into butter mixture. Mix well. Shape dough into small balls. Roll balls in cinnamon-sugar mixture. Place 2" apart on ungreased cookie sheet. Bake at 400 degrees for 10-12 minutes.

World's Best Sugar Cookies

1 cup granulated sugar
1 cup confectioners sugar
1 teaspoon vanilla
1 teaspoon almond extract
2 eggs -- beaten
5 cups flour
1 teaspoon salt
1 teaspoon soda
1 teaspoon cream of tartar
Cream butter, oil and sugar. Add extracts and eggs. Beat well. Add dry ingredients. Chill. Roll in balls, walnut size. Flatten with glass dipped in sugar. Bake at 350 degrees for 10 to 12 minutes.
