Lard, fat, or vegetable oil
Mix flour, salt, and pepper. Cut rabbit into frying sized pieces. (I usually cut the legs off at the body, then cut the body in half). Put oil into cast iron skillet and heat on medium heat. Roll rabbit in flour. Place rabbit in skillet, cover and cook until brown, turning as needed. (Keep heat low, and cook slow. If you don’t you’ll have brown outsides and bloody insides. Just like the first time you fixed your husband chicken).

Bacon
Prepare birds. Preheat oven to 475. Grease a roasting pan with butter. Season bird with salt and pepper to taste. Place in the roasting pan. Lay stripes of bacon on each bird. Place pan in oven, in about 15 minutes lower heat to 350. Baste often with butter and drippings.

Cut up quail (two legs and breast). Season with salt and pepper and roll in flour. Add grease to skillet and get hot. Place quail in hot skillet and cover. Fry on low heat until tender. Turn as needed.
After quail is finished frying; make gravy out of residue left in skillet and serve with the quail and biscuits.
