I made this cake expermenting, it was a big sucess!!
A cross between pumpkin pie and cake.
Everyone told me to write it down before I forgot what I did.
So here it is.
Ingredients:
2 cups self-rising flour
2 cups sugar
½ cup vegetable oil
4 eggs
2 tsp. cinnamon
1 can (29 oz) pumpkin (like you use to make pies)
Directions:
Preheat oven to 350 degrees
Grease and flour a 9x13 inch pan
(I just used pam)
Add 4 eggs, ½ cup oil, and pumpkin, mix well.
Add 2 cups sel-rising flour, 2 cups sugar and cinnamon, mix well.
Pour cake mixture into your 9x13 inch pan
Bake at 350 for about 30 minutes until a toothpick comes out clean.
Icing:
Ingredients:
1 cup milk
1/4 cup self-rising flour
1 cup sugar
1 cup shortening
2 tsp. Vanilla
Directions:
Over medium heat, cook flour and milk until thick.
Remove from heat and let cool (I stick it in the refrigerator)
Mix sugar and shortening until light and fluffy.
Add cooled flour-milk mixture,
mix until light and fluffy, add 2 tsp. Vanilla.
Mix well. Spread over cooled cake
