Microwave Peanut Brittle

Use a 1 1/2 quart casserole dish, stir together:

1 cup sugar
1/2 cup white corn syrup

Microwave 4 minutes on high.

Stir into sugar mixture:
1 cup roasted peanuts

Microwave 3 to 5 minutes on high until light.

Add to mixture, blending well:
1 tsp.margarine
1 tsp. vanilla

Microwave 1 to 2 minutes on high. Peanuts will be lighty brown and syrup hot.

Add to mixture:
1 tsp. baking soda

Stir untl light and foamy. Pour onto a lightly greased cookie sheet. Let cool for 1/2 to 1 hour. Break into pieces and store in an airtight container.
Makes about a pound
