My husband is a turkey hunter, so of course we eat Wild Turkey.
He even talked me into going hunting with him, and I managed to get myself a gobbler!
Now on with how we cook this delicious meat.

Fried Wild Turkey

1/2 Turkey Breast cut into strips
2 cups milk
1 Quart vegetable oil
2 eggs
2 pounds flour
salt
pepper

Remove all connective tissue when preparing breast meat.
Cut into thumb sized strips, being sure to slice against the muscle grain to ensure tenderness.
Beat 2 eggs and 2 cups milk in a large bowl.
Salt and pepper turkey strips and soak in milk/egg mixture for a few minutes.
Drop strips into plastic bag containing flour and shake until strips are well coated.
Heat about 1/2 inch oil in a large iron skillet.
Place meat into the grease and cook slowly until slightly brown, then turn.
Do not overcook.
