Melt shortening in skillet, brown squirrels and place in a baking dish. Dice onion and brown in skillet. Add to squirrels. Salt and pepper. Melt shortening and brown flour as if to make gravy. Add enough water, as if to make gravy. Stir and pour over squirrels. Cover with foil and bake 1 to 1 1/2 hours. Until meat is tender and gravy has thickened.
