6 baking potatoes,
3 tablespoons butter
3 ounces cream cheese or 1/3 cup cream
1 egg, beaten
paprika
salt and pepper to taste
chive
A comparable amount of sour cream also works well but results in a less-firm potato mash
Bake potatoes for 1 hour at 450 degrees. Scoop out potato from skin and mash. In a separate bowl, combine all other ingredients and beat well. Combine the two mixtures and blend until creamy and smooth. Fill the potato skins and bake for 25 minutes at 400 degrees. Top with chives and serve hot.
