BUTTERMILK-HONEY BREAD
1-1/2 pkgs active dry yeast
1 tsp. sugar
3/4 cup warm water
1-1/2 cups buttermilk (warm just to take chill off)
2 Tb. butter, melted
3 Tb. honey
1 Tb. salt
6 to 6-1/2 cups all-purpose flour
Sprinkle yeast & sugar over warm water in a small bowl. Stir, let stand until foamy. Combine buttermilk, butter, honey, & yeast mixture in a large bowl. Add salt & 2 cups flour. Stir. Add remaining flour. Beat until a shaggy dough is formed. Knead on lightly floured board about 5 minutes, adding flour 1 Tb. at a time. until dough is smooth and satiny. Put in greased bowl, grease top, cover with plastic wrap. Let rise until doubled in bulk; about 1 to 1-1/4 hours; in a warm area. Gently deflate dough, turn out onto a floured board, divide into 2 equal portions. Form into loaves place on greased pan. Cover, let rise until doubled in bulk; about 30 to 45 minutes. Bake at 375.
