3 eggs
1 cup sugar
2/3 cup canned pumpkin
1 teaspoon soda
1 teaspoon cinnamon
3/4 cup flour
1 teaspoon lemon juice
1 teaspoon pumpkin pie spice
Grease an 11 x 14 inch pan lined with waxed paper. Grease again. Mix ingredients
in order given. Pour onto pan, sprinkle with chopped nuts if desired. Bake at 15 minutes at 350 degrees.
Cool some and sprinkle with powered sugar. Roll into a log while still warm, unroll and
spread with filling and re-roll. Cool completely.
Filling
2 tablespoons butter
8 ounce cream cheese - room temperature
3/4 teaspoon vanilla
1 cup powered sugar
Cream together and add 2 tablespoons cool whip if desired.
