    Hope you enjoy these recipes.I love to cook and thought I would share a few of my secrets with you.I will be changing these a few times a month so be sure to check back and see if there may be something you would like to try.I would also like to thank my friend Karen for contributing some of her favorite recipes.

POTATO PANCAKES
1 3/4 cups grated raw pottatos*2 eggs well beaten* 1/2 tsp.salt*1 1/3 tsp.flour* 1tsp. cream* 1/4 cup melted butter*Drain grated potatos in a seive for a few mintues.Add salt,flour,eggs and cream.Mix well.Drop potato mixture into melted butter.Brown on one side,turn and brown second side.Serve hot.Yields about 18 pancakes.

CHICKEN SALAD
3/4cup mayonnaise*3/4cup buttermilk*1/4cup parmesan cheese*2tsp.basil leaves*3cups diced cooked chicken*8oz.corkscrew pasta,cooked,drained,and cooled*1(16oz) package frozen mixed vegetables,cooked,drained,cooled*6tbls.margarine,softened*1 1/2tsp. Italian seasoning and oregano* In large bowl mix mayonnaise,buttermilk,cheese and basil.Mix in chicken,pasta and vegetables and chill at least one hour before serving mix in margarine and oregano.

HONEY GLAZED BRANDIED CARROTS
1(1lb.)bag frozen baby carrots*3tbsp butter*3tbsp.honey*2tbsp.brandy*1 1/2tbsp.chopped parsley*salt and pepper to taste*Cook carrots in salted water until they are tender;drain.In a skillet,place carrots and remaining ingredients,cook and stir until carrots are glazed and glossy.

SWEET AND SOUR GREEN BEANS
1 can green beans*1/4cup sugar*1/4cup vinegar*3 slices bacon*i small medium onion*Drain green beans in strainer.Rinse well.Pour into saucepan.Add sugar and vinegar.In seprate pan,fry bacon and onion.Add to green bean mixture and cook for 20 minutes or to desired taste.

SWISS CHICKEN

4 chicken breasts*swiss cheese slices*1can cream of mushroom soup*1/4cup sherry or white wine*bread crumbs*Place chicken breasts(halved and boned,8 fillets) in mayonnaise coated casserole pan.Cover with slices of swiss cheese.Mix mushroom soup with sherry.Pour over chicken and cheese.Cover top with bread crumbs and dot with butter.Bake at 325 degrees for 1 hour.

OLD-FASHIONED BREAD PUDDING
4cups bread crumbs*2cups milk,scalded with 1/4cup butter*1/2cup sugar*2 eggs,slightly beaten,1/4tsp. salt*1tsp.cinnamon*1/2cup raisins* Heat oven to 350 degrees.Put bread crumbs in baking dish.Blend remaining ingredients and stir.Place baking dish in pan of hot water,about one inch deep and bake for 45 to 50 minutes,until knife inserted comes out clean.

BANANA NUT BREAD
2cups sugar*4 eggs*1cup shortening*nuts*2 1/2cups flour*6 overripe banana's*2tsp.soda*dash of salt* Combine ingredients.Bake at 350 degrees for one hour.Can be frozen for later too.

COOKIE CAKE
1 box yellow cake mix*1 egg,slightly beaten,1 can Eagle Brand milk*1(12oz)bag chocolate chips*1 cup chopped pecans*1/2bag Heath Bits-O-Brickle* Combine milk and egg.Add cake mix and chopped nuts.Pour into pan and top with chocolate chips and Bit-O-Brickle.Bake at 350 degrees for 30 to 35 minutes.Tastes even better the next day!

PINEAPPLE SHEET CAKE
2cups flour*1 1/2cup sugar*1tsp.soda*1can crushed pineapple*2eggs*1/2cup brown sugar*1/2cup nuts*Mix flour,sugar and soda together,add pineapple and eggs.Beat well. Pour into greased sheet cake pan.Add brown sugar and nuts seperately.Bake at 350 degrees until done.
