~ Red Beans & Rice ~
Ingredients
1 pound dark red beans,Dry
1 large onion chopped fine
1 pound smoked ham or salt pork-or-
1 pound smoked sausage, sliced or cut in chunks
2 Bay leaves
2 cloves of garlic, chopped fine
3 or 4 sprigs of parsley, chopped fine
2 green onions with tails, chopped fine
1/2 tsp. ground white pepper
1/2 tsp. ground black pepper
you may add a large smoked ham hock if you like
salt to taste
Directions
Soak Dry Beans Over Night
Drain the beans and add to a large dutch oven (pot) with fresh water.
bring the beans to a full rolling boil, and boil for about an hour
or until beans are tender, But not falling apart! ( Cook beans in a
covered pot with water (About 2 Quarts) or they may become discolored and they will harden ).
Add all the other ingredients.... If necessary add enough water to cover
the beans. Bring to a boil again, and reduce heat to a low simmer. simmer
for 2 or 3 hours, stirring occassionally so beans don't stick to the bottom.
If beans are not creamy you can remove one or two cups and mash them..then
return the beans to the pot. Remove the Bay Leaves and discard before serving!
Serve over a cup of cooked hot rice & Enjoy!
NOTE: This recipe can be used for Dry White Beans also!!
Don't add the bay leaves if you prefer to use the Dry White Beans!!
