~ Red Velvet Cake ~
1 1/2 cups sugar
1 cup butter (Do not substitute margarine)
2 eggs
1 tsp. vanilla
1 tsp. butter extract
2 ounces red food coloring
2 1/2 cups cake flour, sifted (Swans cake flour is best, if available)
2 to 3 Tbsp. cocoa
1 cup whole milk (or buttermilk if desired)
1 tsp. baking soda
1 tsp. vinegar
Cream together the sugar and the Butter.
Add eggs one at a time. Add the extracts and food coloring
and beat
Combine flour and cocoa; Add alternately with milk to mixture.
Fold in the soda mixed in vinegar.
Bake in three 8 or 9-inch greased and floured cake pans at 350%F.
For about 25 to 35 minutes or until cake tests done..... Ovens vary
When cake is done let cool completely
~ Red Velvet Icing ~
3 Tabsp. flour
1 cup (2 sticks) butter
1 cup milk
1 cup granulated sugar (or confectioner's sugar)
1 tsp. vanilla
Mix flour and milk to a smoothe paste.
Cook over low heat until thick, stirring constantly.
Cool completely- Then, Cream butter, sugar and vanilla.
Add flour mixture gradually, beating constantly until of
spreading consistency.
Cake must be completely cooled before icing
