~ Mardi Gras or Any Holiday King Cake ~
2 packages of active dry yeast
2 tsp. granulated sugar
1/2 cup of lukewarm water
4 1/2 cups of all-purpose flour,( divided )
1/2 cup of granulated sugar
2 tsp. salt
1 tsp. ground nutmeg
1/2 cup of lukewarm milk
1 tsp. of grated lemon peel
5 egg yolks
1/2 cup (1 stick) of butter, cut into small chunks
2 Tabsp. butter, divided
1 dried red kidney bean, or 1 nut or a tiny(1 inch) plastic baby doll(optional)
1 egg beaten with 1 Tabsp. of milk
Additional butter, for the top of the cake
Granulated sugar
Purple, Green, and Gold, tinted sugar ( you will need about 6 Tabsp. of each color
For other Holidays, other than Mardi Gras, use the tinted sugars for that Holiday
Sprinkle the yeast and 2 tsp. sugar over lukewarm water. Let soften.
Stir, then let sit about 10 minutes, until light and bubbly.
Mix 3 1/2 cups of the flour, sugar, salt and nutmeg well.
Add the yeast mixture, milk and lemon peel. Work mixture together well.
It's ok to use an electric mixer or food processor
Add egg yolks; beat well. Work in butter; continue to beat until
Butter is incorporated and textute is smoothe.
Either change to a mixer dough hook, or turn dough out onto a floured
surface, and knead until smooth and elastic, working in remaining
1 cup of flour gradually. Dough will not be sticky when ready.
Buttera bowl with 1 Tbsp. butter; put ball of dough in the bowl
and turn to coat all sides. Cover bowl with a towel, put in a warm
draft-free place and let rise until double in bulk, About 1 1/2 to 2 hours.
Butter baking sheet with remaining 1 Tbsp. butter. Turn dough out
onto floured surface and form into a roll about 14 to 15 inches long.
(This can be done with your hands.) Put roll on prepared baking sheet and
form into a ring shape, pressing ends together to seal. Push nut or baby or bean
into the cake from the bottom so that it is not visible from the top.
Cover with a towel and set in a warm draft-free place to rise
until double in bulk, 45 minutes to an hour.
Brush top of cake with egg-milk mixture wash.
Bake on middle rack of preheated, 375%F. oven for about
30 minutes or until light brown.
Slide cake onto wire rack to cool.
Butter the top of the cooled cake; Cover the cake
by spinkling about 1/3 tinted colored sugar alternate colors
Cover entire top of the cake .....
yields: about 15 servings per cake
Take extreme caution, if you place baby, nut or bean in the cake
This recipe can be used for filled King cakes also,
After the first Rise..... divide dough into 2 or 3 equal
sections, and follow the same directions, But before
allowing to Rise the 2nd time, roll the dough to
about a pie-crust thickness, then add an equal amount of
granulated sugar and cinnamon... sprinkle this over each
section of rolled dough, after this Add your favotite filling
To the center, and bring up the edges of the dough and seal by
pinching the entire edges together. do this with all sections.
Carefully braid on the prepared baking pan
And continue with the instructions.
