~ Baked Stuffed Flounder ~



1/2 cup chopped celery
8 Tbsps. butter,
1 clove garlic, minced
4 tsp.fresh lemon juice
1/2 cup chopped green onion with tops
1 cup of bread crumbs

1/2 pound of boiled shrimp
1 egg, slightly beaten
4 flounders, medium sized
1/2 puond of lump crab meat
2 Tbsp. chopped parsley
Salt, black & cayenne pepper

Saute celery, onion, and garlic in melted butter- over low heat,
until onions become clear -transparent- Remove from heat.
Add bread crumbs, shrimp, crab meat, parsley, and egg.
Mix well. Season with salt, black pepper and cayenne pepper.

Split thick side of flounder lengthwise and crosswise.
Loosen meat from bone of fish, to form a pocket for stuffing.
Brush well with melted butter and fresh lemon juice, salt, and pepper.
Stuff pocket with the above mixture. Place in pan with enough
water to cover bottom of the pan.Broil 3 inches from heat,
until fish flakes very easily with a fork.
Baste every few minutes with liquid in pan, until fish is done.
