~ Seafood Gumbo ~
3 large cooking spoons lard
3 large cooking spoons plain flour
1 large onion chopped fine
2-3 pods {cloves} garlic chopped or minced
1/2 Bell Pepper- chopped
3 Quarts water
salt, red and black pepper- to taste
1 can fresh claw crab meat
several whole crabs
1 pound fresh peeled shrimp
oysters and liquid
1/2 cup of parsley chopped
3-4 green onions chopped
Make a ROUX with the lard and flour. Cook slowly, stirring often
until brown...Make sure it is brown...Add the cut up onion, garlic,bell
pepper...stir with the roux, slowly add about 3 quarts of water, stirring
while you you pour. Add salt and peppers to taste (season well).
Then add a can of fresh claw crab meat and several cleaned whole
crabs and cook about an hour. Then add one or more pounds of raw fresh
peeled shrimp and liquid from a pint of oysters and cook until shrimp
are done. About 15 minutes before serving, add the oysters. Add chopped
parsley and green onions about 30 minutes before serving.
Serve over rice.
Be sure to have a bottle of fresh file` on hand so each person
can add his/her own.
