~ Cajun Fried Rice ~
1 cup peeled, cooked and deveined crawfish tails or shrimp
1/2 cup chopped mushrooms
1 tsp. sugar
1/4 cup soy sauce
4 cups cooked rice
4 eggs
4 onion tails, finely chopped
2 Tbsp. cooking oil
In a large skillet or wok, stir - fry the crawfish or the shrimp
and the mushrooms in oil to which a tabsp. full of soy sauce has been added.
Fry over medium heat for 10 mins. then drain and set aside.
Next scramble the eggs until firm and crumbly; add the eggs to the
crawfish or shrimp. Stir the sugar into the 1/4 cup of soy sauce and add
to the oil; add remaining ingredients to skillet or wok.
Stir over medium heat until warm. Add additional soy sauce to taste,
if desired.......
Yields about 4 Servings
My Uncle use to fix this recipe when I was growing up, he was a very good cook!
