BREAKFAST FOODS

CHILI EGGS

In saucepan melt: 3/4 butter Sauté: 1/4 cup each chopped onions, mushroom In large bowl slightly beat 10 eggs.

Mix together in another bowl: 1/4 cup flour
1 tsp bkg powder
1/2 tsp salt
1 pint cottage cheese
(small curds)

1 # shredded mild cheese
4 oz can diced chills

Stir together and pour into a 9x13 pan and bake in oven at 350 for 30-40 minutes. Serve with chili sauce or salsa. 12 servings per pan.

WAFFLES from VHS Foods Class

(Double the recipe)
1 1/4 cup flour
2 1/2 tsp baking powder
1/2 tsp salt
4 tsp sugar

Stir to mix well. The add 2 TBSP Butter. Cut butter into dry ingredients with pastry cutter.

Blend together 2 egg yolks
1 cup milk

Beat all ingredients together till smooth, but don't over beat with electric mixer. Stiffly beat 2 egg whites until peaks form, then fold into batter. Pour batter into griddle about 2/3 full. Steam stops when waffle is done. About 4 minutes.

PANCAKES

1 beaten
egg 2 tsp sugar
2 cups sour milk or buttermilk
¾ tsp salt
1 cup
water
1 tsp baking powder
dissolve 1 tsp soda with sour liquid
1 ½ -3 cups flour

for graham pancakes, add 2 cups graham flour & 1 cup white flour. Graham flour is the same as whole wheat flour. I add half whole wheat and half white. Buttermilk is a must in this recipe.

NEVER FAIL DONUTS

3 eggs, beaten

1 tsp soda

1 1/2 cup sugar

1 tsp baking powder

3 tbsp melted butter

1/2 cup corn starch

2 cups buttermilk

1 tsp nutmeg

1 tsp salt

flour to make dough easy to handle Drop in deep fat. These will keep moist and not absorb the fat.

PANCAKES
VERY GOOD AND LIGHT.

1 egg
1 cup flour
1 TBSP sugar
3 tsp oil
dash of salt
1 cup buttermilk

Beat egg, sugar and salt together. Add 3/4 to 1 cup flour and the oil and buttermilk. Last add 1 tsp soda in 1/4 cup hot water. Stir to dissolve soda. Bake on a hot griddle.

ROCK & RIVER BREAKFAST QUICHE

8 oz mild Italian Sausage
1 cup cheddar cheese, shredded
1 cup Monterey Jack cheese, shredded
Pastry for 1 pie
3 eggs, beaten lightly
1 cup milk
1/8 tsp dry mustard
dash nutmeg

Brown sausage, then layer sausage, cheeses on pie crust. Mix other ingredients and pour over other stuff. Bake at 350 for 30 minutes. Let stand 5 minutes before serving.

RAISED DOUGHNUTS

Mix together:

2 cup warm milk
2 pkg dry yeast
2 tsp salt
1/4 cup sugar
1 egg
2 TBSP butter or margarine

Add enough flour to make dough not sticky. Leave dough rest for 1/2 to 3/4 hour. Roll out to 1/2 inch thick, cut with cutter and fry in hot grease.

Frosting: 1 lb powdered sugar
1 tsp vanilla
1/2 tsp salt

Add enough hot water to make a thin frosting. (but not too thin)

CAKE DONUTS

4 cups flour
4 tsp baking powder
21/2 tsp salt
1/4 tsp nutmeg
1 cup sugar
2 eggs (beaten)
3 TBSP melted shortening
1 cup milk
1/4 tsp lemon or vanilla extract

Beat eggs. Add milk and stir. Then add shortening and mix well. Sift dry ingredients and add to milk mixture. Mix till smooth. Add flavoring. Roll to 1/4 in thick. Deep fat fry in hot grease. Makes 4 dozen.

BREAKFAST PIZZA

1 pkg crescent rolls
1 pkg Jimmy Dean Hot Sausage, browned
1 lb diced hash browns
1-8oz pkg mozzarella cheese
1-8oz pkg cheddar cheese
6 beaten eggs.

green peppers, onions or what ever else you want. Put crescent rolls on bottom of pan and add the rest of ingredients and bake at 350 for 40 minutes

LITTLE BEAR BREAKFAST CEREAL

Stone ground organic wheat, rice and bran. Cooking instructions: Add 1 part dry cereal gradually to 2 1/2 parts boiling water; stirring constantly until cereal dissolves. Reduce heat to low and cook 5-10 minutes. Add salt to taste.

SOUR CREAM BREAKFAST CAKE

4 eggs
½ c sugar
¾ c vegetable oil
1 pkg yellow cake mix
1 c sour cream
¾ c walnuts-chopped
¼ c brown sugar
1 T cinnamon

Beat eggs till thick and fluffy. Add sugar and oil and beat again. Blend in cake mix, sour cream and nuts. Pour ½ of batter into well greased bundt pan or 9x13 pan. Mix together the brown sugar and cinnamon and sprinkle over the batter. Swirl in lightly with a knife. Pour the remaining batter on top. Bake at 350 degrees for 45-60 minutes (45 for 9 x13) Dust with powdered sugar or make a glaze with powdered sugar or make a glaze with powered and ½ tsp vanilla and water to drizzle.


Mormon “Johnnycakes” (Corndoggers or Pancakes)

1 cup cornmeal
2 tsp margarine
2 T buttermilk mix
¼ tsp salt
1 tsp sugar
½ tsp soda

Add ½ cup or a little more water Cook over open fire on skillet (griddle). Be careful, fire can’t be too hot. They burn easily. Make them smaller so they are easy to turn. (3 - 4 people)
