Pumkin and Oat Muffins

2 c flour
4 tsp. baking powder
2 tsp. pumpkin pie spice
½ tsp. soda
1 tsp. salt
1 ½ cups pumpkin
1 c brown sugar
2 eggs
½ c milk
½ c oil
2 cups quick oats

Mix dry ingredients and set aside. Combine pumpkin, brown sugar, eggs, milk, and oats in a bowl. Add dry ingred. Mix just until moistened. Spoon in muffin tins. Top with crumb topping. Bake 18-20 min at 400°

Brown sugar crumb topping

1 c brown sugar
2 Tblsp. flour
½ tsp. pumpkin pie spice
1/4 c margarine
Mix until crumbly

BEEF IN PEPPER CUPS

Beef in Pepper cups

6 med. green peppers
1 lb. ground beef
1/2 cup chopped onion
3/4 tsp.salt
dash pepper
1 16-0z. can tomatoes, cut up
1/2 cup regular rice
1/2 cup water
1 tsp. worcestershire sauce
1/2 tsp. chili powder
1 cup shredded sharp American cheese (4 oz)

Remove tops and seeds form peppers. chop enough of the tops to make 1/4 cup. Cook whole green peppers in boiling salted water for 3-5 minutes. Invert and drain. Sprinkle insides lightly with salt. In a skillet cook beef,onion, and the 1/4 cup chopped peppers. till meat is browned and veggies are tender. Drain excess fat. Season with the 3/4 tsp. salt and pepper. Add tomatoes, uncooked rice, water, Worcestershiresauce, and chili powder. Cover and simmer until rice is tender...15-20 minutes. Stir in half the cheese. Stuff peppers with meat mixture. Bake in 12X71/2X2 inch baking dish at 350° for 25-30 minutes. Sprinkle with remaining cheese and return to the oven until cheese melts...2-3minutes. 6 serving...

DINNER IN A PUMPKIN

1 small - med. pumpkin
Brown:
1 1/2 pounds ground beef
3/4 cup chopped onion
Drain extra fat off.
Add:
2 Tb.soy sauce
2 Tb brown sugar
1 4 oz. can mushrooms (drained)
1 small can chinese water chestnuts...chopped
1 can cream of chicken soup
Simmer 10 minutes then add:
1 1/2 cups cooked rice.

Pour mixture into pumpkin. Put on top and place on a baking sheet. Bake 1 hour at 350°. To serve, scoop out inside. scoop some pumpkin with it so serve as the veggie! Voila! The kids love it! Hope you do too!

Pumpkin Roll

3 eggs (beat 5 minutes and add:)
1 cup sugar
2/3 cup pumpkin
1 tsp. lemon juice
3/4 cup flour
1/2 tsp. salt
1 tsp.soda

Beat well. Grease and flour a 11X15? cookie sheet. Pour mixture in and bake 15 minutes at 375°. Let sit in pan 5 minutes. Dump out onto a dish towel sprinkled with a little powdered sugar. Roll up with dish cloth. Cool 1 hour in fridge. Unroll and spread with filling.

Cream cheese filling:

8 oz. cream cheese
1 cup powdered sugar
2 tbs. margarine.

Beat well and spread on pumpkin roll. Roll up and chill.

I collect corn bread, brownie, and pumpkin recipes,

This one is light and sweet. Don't tell any Southerners, they don't put much sugar in cornbread. But OOOH they are good!

Coffee Shop Corn Muffins

1 1/4 c cornmeal
1 c flour
1/3 c packed brown sugar
1 tsp baking soda
1/2 tsp salt
1 egg
1 c buttermilk
3/4 c vegetable oil
IN a bowl combine dry ingredients. In a separate bowl beat egg, buttermilk, oil together. Stir into dry ingredients just until moistened. Fill greased and paper lined muffin cups 3/4 full and bake at 425 for 12-15 minutes.. Cool in pan for 10 minutes before removing to a wire rack.

Here is a good sweet variation
Maple Corn Bread

1 1/4 c flour
1/4 c cornmeal
1 1/2 tsp baking powder
1/2 tsp salt
1 egg
3/4 milk
1/2 c maple syrup
3 Tbsp vegetable oil

Combine dry ingredients. Beat together milk, syrup, egg and oil.. Stir into dry ingredients just until moistened.
Pour into a greased 9 in sq baking pan and bake at 400 for 20-22 minutes. cool for 10 minutes before cutting and serving.

Here is my fave all-around recipe. It is the one on the baking powder can.

1 c cornmeal
1 c flour
1/4 c sugar
1/2 tsp salt
4 tsp baking powder
1 egg
1 c milk
1/2 c shortening, softened

Stir together dry ingredients. Beat together egg milk and shortening. Stir into dry ingredents just until moistened. Bake in greased 8 in sq pan at 425 for 20-25 minutes.

This is another fave but I can no longer find that kind of soup mix. If you can, try this one; it is terrific!

1 envelope Lipton Fiesta Herb with Red Pepper soup mix
1 1/2 c cornmeal
1 c flour
1/2 c sugar
1 tbsp + 1 tsp baking powder
3 eggs, beaten
1 1/2 c milk
1/3 c oil

Combine dry ingredients. Make a well. Beat eggs, milk and oil. Stir into dry ingredients just til moistened. Pour into 9 in sq baking pan and bake at 425 for 25 minutes.

Mexican Corn Bread

1 c flour
1 c cornmeal
2 tbsp sugar
3 tsp baking powder
1/2 tsp salt
1 c milk
1/4 c oil or melted shortening'
2 eggs, slightly beaten
1 can chopped green chiles, drained
1/4 c chopped onion
1/2 c shredded cheddar cheese

Combine dry ingredients. Stir together milk, oil and eggs, stir into dry ingredients just until moistened. Fold in chiles, onions and cheese. Bake in 8 or 9 in greased pan at 425 for 20-25 minutes.

1/2 cup shortening
1 1/2 cups sugar
1 cup pumpkin
1 egg
1/2 tsp salt
1 tsp nutmeg
1 tsp cinnamon
1 tsp vanilla

1 tsp baking powder
2 1/2 cups flour
2 cups chocolate chips

Preheat oven to 375. Combine above ingredients. Bake 10 minutes.

Fresh Apple Cake

4 C peeled and seeded, chopped or grated apples
1 C Brown sugar
1 C granulated sugar
3 eggs
1 C oil
3 tsp vanilla
1 tsp soda
3 tsp cinnamon
1/4 tsp baking powder
2 C flour
1 C nuts (optional) (I sprinkle the toasted nuts over the frosting)

Beat eggs till light and fluffy, add oil, sugars, apples and vanilla. Mix well add soda, cinnamon and baking powder, Mix well Add flour mix well, Pour batter into a dripper pan that has been greased and floured. (I spray with bakers joy instead) Bake 350 degrees 20-25 minutes or until done. Frost this with a cream cheese frosting

DREAM CAKE

1 pkg. chocolate cake mix
1 jar Mrs. Richardson's butterscotch, carmel, fudge ice cream topping.
1- 8 oz container cool whip
2 Skor bars or Heath bars crushed

Make the cake as per instructions on the box (in a 9X13 pan). After it has cooled poke holes in it with the handle of a wooden spoon (lots of holes) Pour ice-cream topping over the entire cake. Frost with cool whip. Sprinkle crushed candy bar over top. serve and watch their faces-

BREAD PUDDING

Fill pan heaping with diced bread or sweet rolls.

SMALL GLASS PAN 9X13

Hot milk -7 ½ cups
Eggs -6
Sugar -1 ½ cups
Cinnamon -1 ½ TBSP
Raisins-1 cup

Put bread into large bowl with milk. Mix well. Add rest of ingredients. Make sure it is really moist. Add more milk if needed. Put into larger pan of water. Bake at 325º until light brown on top and still a little moist. To serve, cut or scoop out. Then top with Rum Sauce. Warm in microwave and then top with Custard Sauce and whipped topping.

RUM SAUCE

SINGLE BATCH
½ cup butter
1 cup white sugar
1 cup brown sugar
½ cup evaporated milk
½ tsp rum extract

Mix and cook until slightly thickened. About 3 minutes. Stir with whip until butter melts in.

CUSTARD SAUCE

1 QUART BATCH
2 eggs
3/8 cup sugar (less than ½ cup)
1 ½ cup milk
1 tsp vanilla

Mix all but vanilla. Stir constantly. Cook until mixture coats spoon smoothly. Remove from heat and add vanilla. Cool. Cook in a double boiler or Microwave 3 minutes, stir, 3 minutes, stir. Keep checking until it coats spoon smoothly.

APPLE CRISP

Fill glass pan to top with sliced apples.

Mix and Then Pour over Apples:

2 cups water
¾ cup brown sugar
3 tsp cinnamon

Pre-bake apples about 10 minutes and mix and then top with:

2 cups melted margarine
3 cups flour
3 cups sugar
3 cups quick oatmeal

Then bake at 350 until brown on top.

APPLE DUMPLINGS

8 Cored and peeled Apples (Granny Smith are really good)
Syrup Mixture

2 cups sugar
1 tsp cinnamon
1 tsp nutmeg
2 cups water

Heat until boiling.

Sugar Mixture

1 cup sugar
1 tsp
cinnamon
1 tsp
nutmeg

Use pie crust. Each apple uses8" square piece of dough. Put apple in center. Each apple gets 1 tsp sugar mixture in core, fill core with butter and top with more tsp sugar mixture. Put in glass pan and pour ½ syrup mixture over top of apples. Bake until golden brown and apples are tender. When you serve put in microwave with syrup mixture drizzled over top. Serve with whipped cream.

BANANA CREAM OR COCONUT CREAM PIE

1 cup sugar
½ cup flour or ¼ cup cornstarch
¼ tsp salt
3 cups milk
Microwave until thick.
7 egg yolks beat into top mixture
Microwave until boiling
Add: 3 TBSP butter
2 tsp vanilla
Cool

Banana Creme

In baked 10" pie shell add Bananas on bottom. Put some filling, add more Bananas, then more filling.

Coconut Creme

Add ½ bag or 1 lb minus about ¼ cup for garnish on top of meringue. Add coconut to filling and pour into baked 10" pie crust. Top pies with meringue. Top meringue before you bake meringue. Bake until browned.

PEANUT BUTTER PIE

One 8 oz. cream cheese (room temp)
1 cup powdered sugar
¾ cup peanut butter
6 TBSP milk
8 oz. Whipped topping

In large bowl mix first 4 ingredients fold in whipped topping. Spoon into graham cracker crust. Refrigerate 4 hours.

Topping

¾ cup whipped topping
4-5 TBSP peanut butter
3-4 TBSP powdered sugar

Mix well and then use cake decorator to put onto top of pie around edge and dots on center.Serve with chocolate sauce or syrup drizzled over the top of piece of pie.

CRAN-RASPBERRY PIE

1 Pie:
2 c frozen Raspberries heaping
2 ½ c canned cranberries
3 full 1/8 cup tapioca (instant)
¾ tsp almond extract
1 cup sugar

Mix together well. Put into prepared unbaked pie crust. Roll and put on top crust. Then spray water between crusts on edges to seal. Put hearts or any cookie cutter design pie crust on top of top crust after marking with 7 piece pie cutter. Spray with water and sprinkle with sugar. Bake at 400 for about 1/2 hour or longer until nice and golden brown.

LEMON PIE

7 egg yolks, (save whites for meringue)
1 cup lemon juice
1 cup sugar
½ cup corn starch
2 cups water
1 cap full lemon extract

Mix together and microwave until thick. Approx 9 minutes.Put into a prebaked pie crust. Then top with meringue and bake until meringue is starting to brown.

Meringue

7 egg whites
½ tsp cream of tartar
½ cup sugar

Whip until it stands in peaks. Then put on top of Lemon Pie. Use this recipe for other pies such as Coconut Cream, Banana Cream, any pie that has a meringue.

DILL DIP

3 cups sour cream
3 cups mayonnaise
3 TBSP parsley
3 TBSP onion flakes
3 TBSP dill weed
1 ½ TBSP seasoning salt

Mix together.(If you double the recipe, use double the amounts of everything except use the same amount of seasoning salt.)

MUFFINS PLAIN BATTER:

10 c flour
3 c sugar
4 TBSP Baking Powder
1 tsp salt
8 eggs
4 c milk
2 c melted butter

Put all in big bucket and mix very well. Can use this as a base for many kinds of muffins.

To Make Caramel Pecan Muffins: add about 1 cup Rum sauce,
2 c Pecans
2 tsp Caramel flavoring.
Lemon Poppy Seed Muffins
3-4 cups Basic Batter
¼ cup poppy seeds
¼ cup Lemon juice

Mix VERY well. Top with poppy seeds. Then bake as other muffins.

Banana Nut Muffins (from Anita)
3-4 cups Basic Batter
4 bananas mashed
1 ½ cup chopped
walnuts

Put nuts on top before you bake muffins. These freeze really well.

Orange Muffins

Take 1-2 oranges. Grind them all up (peel and all) with a food grinder/chopper until real fine. Then blend into Basic Batter. Put in muffin tins with liners and sprinkle with sugar.

Sour Cream Muffins

Take about the same amount of Basic Batter.
Add about
1 to 1 ½ cups sour cream.

Mix well and put in pans. Then sprinkle with nutmeg/sugar mixture. (With this basic batter you are really limited by your own imagination. )

CORN MUFFINS

3 cups flour
eggs
3 cups corn meal
3 cups milk
1 cup sugar
1 cup butter
8 tsp baking powder
10 TBSP honey
1 tsp salt

Mix well and then bake in muffin papers.


Easy Chicken Divan

A great way to use up leftover cooked chicken or turkey. Serve with rice, pasta or on toast.

1 bunch broccoli
3 cups thickly sliced cooked chicken
paprika to taste 2 tbs.. butter
1/4 cup all-purpose flour
2 cups milk
3/4 cup grated mozzarella or cheddar cheese
3 tbs.. freshly grated parmesan cheese,
divided pepper to taste
1. Preheat oven to 350f (180c)
2. Peel broccoli stems and quarter lengthwise. Cut broccoli into 3-inch pieces. In a large saucepan of boiling water, cook broccoli for 2 to 3 min. or until tender-crisp; drain well. Place in 12x8 inch baking dish. Arrange chicken over top.
3. In saucepan, melt butter over medium-low heat; stir in flour until smooth. Whisk in milk; cook, stirring frequently, until thickened. Stir in mozzarella cheese and 1 tbs.. of the parmesan cheese until melted. Season with pepper.
4. Pour over chicken and spread evenly. Sprinkle with remaining 2 tbs.. parmesan cheese and paprika. Uncover and bake for 5 min longeror until hot and bubbling.

3 pkg. chopped broccoli
1 can cream of mushroom soup
1 cup mayonnaise
2 eggs
1 cup grated cheddar cheese
Cook broccoli; drain and mix with remaining ingredients. Bake at 350 degrees for 30 minutes.
