first I would like to wish everyone who visits this page a happy and safe holidays
on this page you will find some of my family favorite recipes.
I hope you enjoy them as much as we do!

CRANBERRY-APRICOT HONEY BUTTER
makes 2 3/4 cups
in food processor,finely chop 1/2 cup each
dried cranberries and dried apricots,add 2 sticks (1 cup) softened butter or margarine
process until blended with motor running pour in 1 cup of honey

HONEY-MAPLE SPICE BUTTER
makes 2 1/2 cups
beat 2 sticks (1 cup) softened butter or margarine until fluffy
gradually beat in 3/4 cup of honey 1/2 cup of pure maple syrup
1/8 teaspoon of ground cinnamon and 1/4 teaspoon of ground nutmeg
until thoroughly blended
both butters can be stored in the fridge for up to 1 month

we pick a saturday between thanksgiving and christmas
that my family gathers at my mothers house to make candy on which we call "candy day" makes sense right
the next 2 recipes are my moms addition to this page
FOOLPROOF DARK CHOCOLATE FUDGE
3 (6 ounce) packages semi-sweet chocolate chips
1 (14 ounce can eagle brand sweetened condensed milk (not evaporated milk)
dash of salt
1/2 to 1 cup chopped nuts
1 1/2 teaspoons vanilla extract
in heavy saucepan,over low heat,melt chips
with eagle brand and salt remove from heat
stir in nuts and vanilla
spread evenly into wax paper lined 8 or 9 inch square pan
chill for 2 hours or until firm turn fudge onto cutting board
peel off paper cut into squares store loosely covered at room temp.

PEPPERMINT TOPPED FUDGE
2 tablespoons butter or margarine
2/3 cup (5-ounce can) evaporated milk
1 1/2 cups of sugar
1/4 teaspoon salt
2 cups miniature marshmallows
1 1/2 cups semi-sweet chocolate pieces
1 teaspoon vanilla
1/3 cup butter or margarine
2 1/2 cups sifted powdered sugar
6 drops green food coloring
1/2 teaspoon peppermint extract
1 to 2 tablespoons of water
1/3 cup coarsley crushed peppermint stick candy (we use candy canes)
line 12x7x2 inch pan with tin foil.butter foil
in a medium saucepan,combine 2 tablespoons butter,evaporated milk,sugar and salt cook over medium heat
stirring frequently until mixture comes to a boil. boil 4 to 5 minutes,stirring constantly
remove from heat stir in marshmallows,chocolate pieces and vanilla
stir vigorously until marshmallows are melted and blended
pour into foil-lined pan
in a small mixer bowl beat 1/3 cup of butter until soft.beat in powdered sugar
green coloring,extract and 1 tablespoon of water
beat until smooth.add more water,1/2 teaspoon at a time,until spreading consistency
spread evenly over warm fudge.sprinkle with crushed candy
press down lightly chill remove fudge from pan by lifting foil
then cut into pieces
