Manhattan Deli Salad
1 pkg. (12 oz.) spiral pasta, cooked al dente
1-1/2 cups black olives, sliced
1 cup green bell pepper, finely diced
1/4 lb. hard salami or pepperoni, sliced and then julienned (cut into
matchsticks)
1 small red onion, diced
1/4 cup Parmesan cheese, shredded
1/4 cup fresh parsley, chopped
3/4 cup Italian salad dressing
Cook pasta in boiling water for 8 minutes. Drain and rinse under cold
running water to stop the cooking process and to cool it off.
Add cooled pasta to a large salad bowl. Add remaining ingredients,
toss, cover and chill until serving.
