Tomato-Rice Salad

4 tomatoes- peeled and diced
8 oz mozzarella cheese, diced
1 tsp dried basil
dash garlic powder
1 tsp salt
1/2 tsp pepper
4 Tbsp oil
2 C. cooked rice (I just use the instant rice)

Toss tomatoes and mozzarella together lightly. Add all other ingredients, except rice, and toss lightly until well mixed. Mix in rice. Let stand at room temp. before serving to enhance blending of flavors.
