The Hermann-Grima Historic House is once again open in New Orleans. It is located on St. Louis Street, right off Bourbon Street. The restored 1830's creole kitchen has a working stew stove, beehive oven and ample hearth. Over a year ago, I took a wonderful class at this museum, and would recommend it to all cooks. "Carnival" begins on Twelfth Night (Jan.6) and ends the day before Ash Wednesday: Fat Tuesday. "Mardi Gras" is the last two weeks of the Carnival period when most of the parades are held.
