Bannana Chocolate Cake
1 1/2 cups flour
1/2 cup sugar
2 tablespoons cocoa
1/2 teaspoon b. soda + b. powder
3/4 teaspoon salt
1/4 teaspoon nutmeg

6 tablespoons cocoa
5 tablespoons oil
3 bannanas
1/4 cup milk
1 egg
1 1/2 teaspoons vanilla
Grease and flour an 8x8 pan. In a bowl, stir the first 6 ingrediants.
Put oil and the 6 tbsp. cocoa in a glass measuring cup.
Microwave on high for 1 minute. Stir in milk. Mash bannanas, add egg and vanilla.
Add oil and cocoa mixture, stir until blended. Mix all together, bake at 350* about 30 minutes.

Chicken Cacciatore
2 pounds chicken breast -- (2 to 3)
1 white onion -- sliced
28 ounces tomato sauce
6 ounces white mushrooms -- sliced
1/2 cup black olives
1/2 cup green olives
2 cloves garlic -- minced
1/2 teaspoon dried basil
1/4 teaspoon celery seed
1 bay leaf
1/2 cup red wine
Brown chicken. Put in crockpot; add onions.
Mix rest of ingredients in a bowl and pour over chicken and onions.
Med. heat--3 to 4 hrs.
Low heat--7 to 8 hrs.
Salt and pepper according to taste. Serve over pasta.
Marinated Corn Salad
Dressing
1/3 cup sugar
1/4 teaspoon salt
1/3 cup white wine vinegar
1/3 cup oil
Salad
1/2 cup chopped celery
1/2 cup green pepper -- chopped
1/2 cup green onion -- sliced
2 cans corn -- drained
1/2 cup red pepper -- chopped
In small saucepan, combine all dressing ingredients.
Cook and stir over low heat until sugar disolves.
In large bowl, combine all salad ingredients, toss.
Add hot dressing, toss. Cover and refrigerate over nite to blend flavors.
NOTES : Very nice to take along as a side dish.

Easy Garden Bake
1 cup chopped zucchini
1 large tomato -- chopped (1 cup)
1 medium onion -- chopped (1 cup)
1/3 cup grated Parmesan cheese
1/2 cup Reduced Fat Bisquick® mix
1 cup fat-free (skim) milk
1/2 cup fat-free cholesterol-free egg product or 2
eggs
1/2 teaspoon salt
1/8 teaspoon pepper
Heat oven to 400ºF.
Lightly grease 8-inch square baking dish or 9-inch pie plate.
Sprinkle zucchini, tomato, onion and cheese in pie plate.
Stir remaining ingredients until blended. Pour over vegetables and cheese.
Bake uncovered about 35 minutes or until knife inserted in center comes out clean. Cool 5 minutes.
NOTES : Makes 6 WW. servings @ 2 Pts. each
