Dee's Bread Machine Recipes
Herbed Burger Buns
1/2 cup water
Add 1/2 cup water, milk, egg, butter, salt, bread flour, sugar, herb, and yeast to bread machine pan in the order suggested by manufacturer. Select dough/manual cycle. When cycle is complete, remove dough from machine to a lightly floured surface. If necessary, knead in enough flour to make dough easy to handle. If dough is too elastic, cover and let rest 10 minutes before shaping.
Herbed Hot Dog Buns: Prepare as above, except shape each portion of dough into a roll about 6 1/2 inches long, tapering ends. Continue as above.
Notes: I made mine into dinner buns and got 12 large buns. I did not put the sesame seeds on them either, just brushed tops with butter when they came out of the oven.
1 1/8 cups water -- lukewarm
Insert ingredients in bread machine according to manufacturer's instructions. Remove the dough from the machine after the first knead - approximately 20 to 30 minutes. Place dough on a floured surface. Divide into 10 parts. Form balls, gently press thumb through center of ball and slowly stretch into bagel shape. While bagels rise, bring three quarts of water and one tablespoon of sugar to a rapid boil in a large saucepan. Using a slotted spoon, drop 2-3 bagels into rapidly boiling water.
2 cups lukewarm water
Place the ingredients in bread machine pan in this order:
2 1/4 teaspoons active dry yeast
Add all ingredients except the dates and walnuts in the order suggested by your bread machine manual and process on the basic bread cycle according to the manufacturer's directions.
10 ounces water
Have all ingredents at room temperature. Add to your bread machine in the order given. Bake at the large dark setting.
This is a very nice bread!
3/4 cup beer -- flat
Place all ingredients in bread machine pan in the order recommended by the manufacturer. Select Basic/White cycle. Use Medium or Light crust color.
10 ounces water
Add the ingredients to your bread machine in the order they are listed.
1 1/3 cups water
Add the ingredients to your bread machine in the order they are listed. Do this on the large white setting.
2 cups sliced -- ripe bananas
All ingredients should be at room temperature before starting.
Select large white bread cycle. Remove the bread from the pan at the end of the baking cycle.
Place bread on a cake rack for at least 1 hour before slicing.

***2 LB ONLY***
Add ingredients as your machine instructs. Bake this one on your sweet, light setting.
3/4 cup milk or water
Add ingredients to bread machine and set to dough setting. When cycle is done, remove dough, punch down and let rest 10 minutes.
3 cups Bread Flour
Add the cheese when you hear the last beep. Bake on your large dark setting.
1 cup water -- warm
Upon completion of the dough cycle, remove dough and form rolls, place on a greased baking sheet, cover with a towel and let rise in a warm, draft-free location for 30 to 40 minutes or until double in size. Sprinkle grated cheese on top. Bake in a preheated 375° oven for 15 to 18 minutes.

Combine all liquid ingredients into bread machine pan, sprinkle with flour (making sure
all liquid is covered, sprinkle with pudding mix, sprinkle yeast over all. Set for dough
cycle. After entire cycle is completed, punch dough down and remove from machine. Roll
dough out to l7 x l0 rectangle.
1 egg plus 1 egg yolk
Put all dough ingredients in bread machine pan. Choose dough setting. When dough is ready, take out and punch down. Cut into 3 equal pieces. Butter a baking sheet. Roll each piece into a rope about 14-16 inches long. Braid the ropes, tucking ends under. Cover and put in warm place to rise until doubled. Brush dough with egg-water wash. Sprinkle with almonds and then with sugar. Bake in preheated 375 oven for about 35 minutes or until golden.
1 cup water
In bread machine pan, place the first 8 ingredients in order listed. Select basic bread setting. Choose crust color and loaf size if available. Mix according to bread machine directions (check dough after 5 minutes of mixing; add 1-2 tablespoons of water or flour if needed) Just before final kneading add cranberries. Makes 1-1/2 lb. loaf.

Measure the first 8 ingredients in the order listed into the Baking Pan. Select: Sweet Bread Setting. Select Regular or Dark crust. Add raisins when Add Ingredients signal beeps. Remove when finished. Cool before slicing.

Place all ingredients into bread machine in
order given.
Bake according to bread machine directions
for regular bake.
Makes 1 (1 1/2 lb) loaf
3/4 cup sour cream
Put ingredients in bread machine in the order listed. Do it on the dough cycle and
3/4 cup warm water
Put ingredients in bread machine and start on dough program. When 5 minutes of kneading are left, add the currents. Let the dough finish the dough cycle. Punch down on floured board and let rest for 10 minutes.
1 1/4 cup water
Measure ingredients in the order listed into baking pan. Select whole grain setting.
1/2 cup milk
1 large egg
1 tablespoon butter or margarine
3/4 teaspoon salt
3 1/2 cups bread flour
2 tablespoons sugar
1 teaspoon basil, rosemary or herded italian spice
2 teaspoons Bread Machine Yeast
1 white of large egg
1 tablespoon water
sesame Seed
Divide dough into 9 equal pieces. Form each piece into smooth ball. Place on large greased baking sheet. Flatten balls into 4-inch rounds; cover. Let rise in warm, draft-free place until doubled in size, 20 to 30 minutes. Lightly beat egg white and 1 tablespoon water. Brush on buns. Sprinkle with sesame seed. Bake at 375°F for 12 to 15 minutes or until done.
Makes 9 buns.

3 1/2 cups white bread flour (or more)
3 1/3 tablespoons brown sugar (Less if desired)
1 teaspoon salt
2 1/4 teaspoons active dry yeast (1 packet)
* EGG WASH
One egg + 2 TBSP cold water
Boil on each side for 1 to 2 minutes. Remove and cool on rack 1 minute, brush with egg * and sprinkle with sesame or poppy seeds, if desired.
Bake at 400 degrees F on a baking sheet sprinkled with cornmeal, until golden - approximately 15 minutes.
Notes:
When applying egg wash, place bagel on a saucer, this avoids a mess and allows you to coat the ENTIRE bagel with the egg wash. After applying egg wash, and is still wet, either sprinkle the seeds on, or have seeds in a bowl and dip the wet bagel in the seeds.

6 tablespoons buttermilk powder
3/4 cup Crisco Shortening
5 cups bread flour - divided
1 teaspoon baking soda
1 teaspoon salt
3 teaspoons baking powder
3 tablespoons granulated white sugar
2 1/2 teaspoons rapid rising yeast (I use Fermipan)
2 cups lukewarm water, buttermilk powder, Crisco, 3 cups bread flour, soda, salt, baking powder, sugar, yeast, 2 cups of bread flour. Turn machine onto 'dough' setting and let process.
NOTE: you will have to stay close by for the kneeding process as your dough will require a 'little' help mixing - once all ingredients are incorporated you can leave your machine to finish the cycle.
WARNING: remove dough from machine as soon as the dough cycle completes otherwise it will start rising and lift the lid off the machine!
Once dough cycle has completed - spray Ziploc bag with Pam or other veggie spray - dump dough into bag, zip up and keep in fridge (it will rise in the bag). From this point you can either make your rolls (as many as you want at one time - this is the beauty of this recipe - you don't have to make up the whole recipe at once and can put the unused dough back into the fridge) by rolling and cutting or make individual rolls in muffin tins by just pinching off a piece of dough, shape into a roll and put in muffin tin and bake at 400° for 12 minutes or until golden.
Note: I prefer to make these in the muffin tins.

2 1/4 cups bread flour

At the beeper (or at the end of the first kneading, add the dates and walnuts. Let the bread cool before slicing.

On lightly floured counter, roll out to 1/2 inch thick. Cut with floured doughnut cutter or glass. Place on lightly greased baking sheet and let rise about 1 hour or until very light.
Fry in heated 375 degree oil, a few at a time, about 1 minute, each side. Drain on paper towel. Dust with powdered sugar or glaze them.

l l/2 cups confectioners sugar

In a small bowl mix together brown sugar and
cinnamon, set aside. Spread 1/2 cup softened butter over dough. Sprinkle with brown sugar
and cinnamon mixture. Roll tightly from 17" side. Pinch edges to seal with finish rolling.
Cut into 1 inch slices, or larger if preferred.
Place into greased cake pans. Let
rise until doubled Bake at 350 for l5 to 20 minutes until golden. DO NOT OVERBAKE.
Combine all ingredients for frosting, mix well. Frost very warm rolls

3 tablespoons butter
1 teaspoon skim dry milk powder
1/4 cup sugar

1 egg
3 cups flour, 2 white & 1 whole wheat
1 tablespoon yeast
1 teaspoon cinnamon
1/2 teaspoon each nutmeg & cloves
3/4 cup currants or raisons
Shape into 20 balls. Place in greased 12 X 14 pan, or on a greased cookie sheet, cover and let rise till doubled in warm place.
Bake at 375* for 15 to 20 minutes.
About 5 minutes before they are done put 1 tablespoon of sugar and 2 tablespoons of milk in a microwave safe container. Bring to a good boil, about 1 1/2 minutes. Brush buns with this as soon as they come out of the oven.
Make crosses on top with glaze.
Glaze:
1/2 cup icing sugar
1/4 teaspoon vanilla
1 tablespoon milk
