Chocolate Peanut Butter Sandwich Cookies

1 cup flour
1/2 cup unsweetened cocoa powder
1/2 tsp baking soda
1/4 tsp salt
4 oz unsweetened chocolate, coarsely chopped
1 stick unsalted butter, cut into tablespoons
1 1/2 cups sugar
1 tsp vanilla
2 large eggs, slightly beaten
4 oz milk chocolate, chopped into 1/4-inch chunks
1/2 cup chunky or smooth all-natural peanut butter
1/2 cup powdered sugar

Preheat oven to 325蚌.
Line cookie sheets with parchment paper.
In medium bowl, whisk flour, cocoa powder, baking soda and salt.
In a medium saucepan, melt the unsweetened chocolate with the butter over low heat.
Scrape the melted chocolate into a medium bowl and let cool.
Stir in the granulated sugar and vanilla until blended and then mix in the eggs.
Stir in dry ingrdients until a soft dough forms.
Fold in milk chocolate.
Roll slightly rounded teaspoonfuls of the dough into 3/4-inch balls.
Arrange the balls 2 inches apart on the prepared baking sheets and flatten them slightly.
Bake for about 13 minutes, or until firm outside but still soft in center rotating baking sheets halfway through baking time.
Slide the parchment paper with the cookies onto wire racks and cool.
In a small bowl, blend the peanut butter with the powdered sugar.
Spread the flat side of half the cookies with the filling and top with remaining half.
Makes 3 1/2 Dozen
Note:These cookies can be made and stored, layered between sheets of wax paper, in an airtight container up to a week ahead WITHOUT the filling.
