Fruitcake1 cake mix (either white or yellow)4 eggs 1/4c water 2 tsp salt 1/2c flour 1 lb candied fruit 1/2 lb candied cherries 1 lb chopped nuts 1 box golden raisins 1 Tbsp lemon extract. 1. Empty cake mix in a bowl and add 1 egg, water, salt and lemon extract. Beat 2 min. 2. Add three eggs and beat 2 more minutes. 3. Add the flour to the fruit mixture and nuts. 4. Add the batter to the fruit and nut mixture. 5. Pour into triple lined with foil greased pans. (I use small loaf pans- 3 1/2x7 ) 6. Bake in a 275' oven for 2 hours and 45 minutes. (Have a pan of water on the bottom shelf while baking.) "With this size pan I get 4 small loaves. It is best baked ahead of time. I usually do mine on the Friday after Thanksgiving." |
