Date & Nut Chews

2 eggs
3/4 tsp. salt
1/2 tsp. almond extract
1/2 cup sugar (granulated)
1/2 cup Karo syrup (light or dark)
1 cup dates, finely cut
1 cup chopped pecans or walnuts
3/4 cup flour
1/3 cup confectioner's sugar

Combine eggs, salt and almond extract -- beat until light.
Gradually beat in the 1/2 cup sugar and Karo syrup.
Add the dates and nuts, mix well.
Fold in flour.
Pour into 2 greased 8 inch square cake pans.
Bake at 375º for 20 to 25 minutes.
Remove from oven and while still hot, cut into 1 1/2 inch squares. Shape at once into small balls and roll in the confectioner's sugar. Yield: 3 dozen cookies
Note: Be careful not to burn yourself while shaping the cookies--I usually just leave them as little squares (they taste just as good!)
