Dublin Coddle Stew


8 strips bacon, diced
2 large onions, sliced thin
1 med apple, peeled, cored and diced
4 large potatoes, peeled and diced
4 large smoked sausages, cut into pieces
2 cups chicken stock
2 tbls chopped parsley
Salt and pepper to taste

Saute bacon in thick bottomed pot.
Add onions and apple, cook unhtil soft.
Add potatoes, sausage and chicken stock.
Cover and simmer until potatoes are tender, about 30 minutes.
Season and garnish with parsley sprinkled on top.

Makes 6 servings
