An easy and elegant meal!
My teenage boy made this for his class, he got an A :-)!!
(Yes, I'm teaching my oldest boy to cook...)
Anyway, this dish quickly became one of our favorite dishes


Easy Chicken Parmesan


4 boneless, skinless chicken breasts
2 tbls veg oil (I use olive oil)
1/2 cup italian bread crumbs
1/2 cup flour
1/2 tsp salt
1 tsp. garlic powder
1/2 tsp. onion powder
Black pepper to taste
1 to 2 tsp. oregano (depending on your taste)
One regular size jar of your favorite spagetti sauce.
(Or your own :-)
One cup of grated mozzarella cheese
1/4 cup Parmesan cheese

In zipper baggie combine flour, salt, garlic powder, bread crumbs, pepper and oregano.
Seal baggie and shake to mix.
Heat oil until hot (med high heat)
Place washed chicken in baggie one piece at a time until well coated.
Place chicken in pan and cook until nicely browned(about 10 minutes) turning occasionally.
Mix cheeses together and put carefully on top of chicken.
Spoon about 1/2 the jar of sauce over cheese and chicken, reserving the rest to put on pasta.
(Just heat in separate saucepan)

Turn down heat and cover; simmer about 25 minutes.
Serve with spagetti or favorite pasta, using the rest of sauce.
Monga!!!!
Add garlic bread and salad for a wonderful dinner.
Also, if desired, add 1/2 cup chedder cheese for additional flavor.
