Never any complaints with my meatloaf...lol!
Its never dry, and its great with my *Cheesy Scalloped Potatoes and with the vegetable of your choice, (of course)!!

My rendition of a great American Meal!!
(this Leftover meatloaf makes a great sandwich:-)

Ritis Meatloaf


2 lbs ground sirloin*
2 eggs, slightly beaten
1/3 cup Italian bread crumbs
1/3 cup quick cook oats
2 good dashes worcestershire sauce
1 or 2 cloves garlic, crushed or 1 tsp garlic powder (depending on taste..I love garlic!)
1 medium onion, chopped fine (optional)
1 dash hot pepper sauce (optional)
salt and pepper to taste

Preheat oven to 350.
Combine all ingredients in large bowl.
Mix very well, you will basically knead this like a dough.
(Yes, I use my hands for this, its the only way, in my opinion!!:-)
Form into a uniformed sized loaf.
Place into loaf pan that has been lightly sprayed with vegetable oil.
Bake until well done, about 1 1/4 to 1 1/2 hours.
(I always check after about an hour...all ovens vary)
to be sure, test with meat thermometer or pierce with fork, juices run clear, its done.)
Pull out of oven, allow to rest for 5 minutes or so...DIG IN!!!!!!!
*You can use any ground meat of your choice or mix ground meats...but I personally use all beef.
