A good cup of coffee is always appreciated with this bread, as is an ice cold glass of milk!!
Try this with peanut butter on it...Yumm!!
My oldest Son wanted this instead of Birthday Cake last few years...lol!!
Ritis' Banana Bread
3/4 cup packed brown sugar
1/2 cup margarine softened
2 eggs
2 medium sized ripe bananas, mashed
1/3 cup milk
1 1/2 cup all purpose flour
1/2 cup whole wheat flour
1/2 tsp nutmeg
1 tsp vanilla
1 tsp baking soda
1/2 tsp salt
1/2 cup chopped nuts (optional)
Heat oven to 350 degrees.
Grease (or you can use veggie spray) bottom
only of a 9x5 or 8x4 loaf pan (or 3 mini loaf pans).
In large bowl, cream sugar and
margarine until light and fluffy,
beat in eggs; blend in bananas, milk, vanilla and mix well.
Slowly add flours, add nutmeg, soda and salt.
Stir only until moistened (batter should be slightly lumpy)
Fold in nuts.
Fold into prepared pan(s) and bake 50 to 60
minutes for regular sized pans
and about 35 to 40 minutes for smaller ones or until a
toothpick inserted in middle comes out clean.
Cool in pans about 10 minutes then remove, cool completely.
(It never gets that far here, we like it warm!)

Also can be frozen, allow to thaw at room temp for a few hours before slicing.
